I am a vegan and I enjoy eating torta’s, a traditional Portuguese sandwich which uses bread as the “meat”.
A sundried tomato torta is a sandwich made from a flatbread (usually a flatbread, although it could be a tortilla) and filled with a mix of cooked vegetables, usually those of the spanish type (e.g., potatoes, lettuce, carrots, red bell peppers, etc.) and finished with an omelette.
The sandwich is from the Mexican cuisine and consists of a crunchy exterior, soft interior, and a savory filling. Most often, the torta is made with a flour tortilla, but a whole grain tortilla is a healthier alternative.

Summer is approaching, which means longer days, time spent in the backyard pool, and meals that don’t need slaving over a hot stove. Sandwiches are usually a favorite this time of year since they are quick and simple to prepare. While I love experimenting with more plant-based choices, my husband and children are always the true test. Guess what? They enjoyed it as well! When everyone eats the same dish for supper, it’s a victory. The greatest thing is that these Torta Milanesa Vegans are simple to prepare, and the colorful toppings make them seem fancy enough for a picnic or party.

Vegan Milanesa Torta Instructions:
– I tried both microwaving and baking the patties; although the microwave proved faster, baking the Chik Patties yielded a crispier exterior. For optimum results, follow the package directions!
– Toast the Bolillo buns (available in most local stores) or use a baguette instead. Before toasting the buns, I also put a coating of butter on them. If you want to make it vegan, use vegan butter or leave it out entirely.
– A few hours before preparing the tortas, pickle the red onions. Fresh lime juice, salt, and chopped red onions are my go-to ingredients. These give the torta a wonderful burst of color and brightness.
I cut the MorningStar Farms Chik patties and put them out on the bolillo roll to ensure equal covering.
Torta Construction:
– Spread a layer of mayo on either side of the toasted buns. Vegan mayo may also be used.
– Spread the MorningStar Farms Chik Patty slices over the roll, then add butter lettuce, sliced tomatoes, avocado slices, and pickled red onions on top. Add some chopped jalapenos if you want to amp up the heat.

Vegan Milanesa Torta

Slice red onions thinly and combine with fresh lime juice and 12 tsp salt in a small container. Place in the refrigerator for at least 1 hour, but preferably longer. If you wish to prepare them ahead of time, they will keep for a few days in the fridge.

Preheat the oven to 375 degrees Fahrenheit. Heat frozen chik patties for 16-18 minutes on a baking pan. Turn the patties halfway through the cooking period for crispier results. The chik patties may be microwaved, but they will be crispier in the oven.

Using butter, toast bolillo rolls in the oven, toaster oven, or in a pan. Vegan butter may be substituted or skipped.

Slice the chik patties into four equal slices after they’re done. On each side of the rolls, spread a thin coating of mayonnaise. Top sliced chik patties with lettuce, tomato, avocado, and pickled red onions on a bun. Add chopped jalapenos for some heat.
