Matt’s favorite things to have with his coffee have always been biscotti. Growing raised in an Italian family made certain aspects of keto challenging, one of which was this. That’s why we decided to create Biscotti Keto for all of you Italian cuisine fans! This is a keeper of a recipe; prepare it in quantity since it will go quickly.

This Isn’t Your Average Keto Dessert…

It certainly shouldn’t be! Biscotti means “twice baked,” as Matt explained in the video. Coconut flour has a distinct absorbency that is difficult to replicate with almond flour. Because it utilizes two different flours, this low carb almond biscotti recipe offers the greatest texture.

Is Almond Flour All I Need?

Biscotti Keto with a Personal Touch

There are a variety of methods to spice up and customize your biscotti. For a distinct taste profile, we enjoy using innovative mix-ins. Here are some low-carb additions to consider:

  • Chocolate Chips — These biscottis are enhanced by the addition of sugar-free chocolate chips. Chopping up chocolate chips or a bar of keto chocolate is one of the greatest ways to incorporate them. Then there’s something that looks nearly exactly like chocolate chunks and melts nicely in keto meals.
  • Substitute almond extract for the vanilla extract if you want a stronger almond taste. Although the taste is powerful, if you enjoy almond extract in cakes and muffins, you’ll love it in these biscottis.
  • Macadamia and “White Chocolate”- There are now a variety of low-carb white chocolates available, which are ideal for use in keto baking. It will be a wonderful treat to chop macadamia nuts small enough and incorporate them into the mixture with white chocolate.
  • Sliced Almonds — If you want a larger chunk than chopped almonds, sliced almonds are a great option. They provide a satisfying crunch while remaining thin and delicate (AKA easy to slice through). After the biscotti has cooled, dip half of it in keto chocolate for an extra wonderful treat!

Whatever mix-ins you choose, make sure they’re finely chopped so you don’t have any trouble slicing through the biscotti and breaking it.

Dipping biscotti in chocolate is a wonderful way to add some additional flair to them. A midway dip or drizzle adds a layer of richness to the dish. We like dark chocolate and almonds as a half-dip combination for this recipe, but you may use whatever chocolate you want, from white to dark. So, what’s the best way to dip?

  1. Check to see whether your biscotti have completely cooled. It will shatter during dipping if you do not wait.
  2. In a mug, melt a 1/2 cup of sugar-free chocolate chips or a chocolate bar. I do this in the microwave, and while it’s melting, I add approximately 1 tablespoon of butter. Chocolate burns fast, so melt it gently and stir it often. The trick is to remove it and continue stirring before the chips fully melt. They will continue to melt due to the remaining heat.
  3. Now comes the exciting part! Dip your biscotti carefully into the cup of melted chocolate and swirl gently until the chocolate reaches halfway up the biscotti. Place on a baking sheet lined with parchment paper and refrigerate for 15-20 minutes or leave on the counter for 30-40 minutes.
  4. Alternatively, for a simpler method, repeat the steps above but drizzle over top. Even so, make sure there’s parchment or wax paper beneath to prevent them from sticking.

How to Make Keto Biscotti

While this dish requires a bit more effort than others, it is well worth your time. Easy-to-follow recipes are enjoyable, but those that require a bit more effort provide the most delectable results. This fantastic recipe will transport you back to the days of classic biscotti and freshly brewed espresso. So put on your chef’s hat and get ready to bake.

Ingredients:

Let’s have a look at what makes these biscottis so tasty. These biscottis, like any great delicacy, begin with high-quality ingredients to create rich tastes and a powerful crunch.

  • 1 cup raw almonds– we’ll finely chop these to have a wonderful nutty bite. If you don’t want the additional almonds or simply want to try a different recipe, use chocolate, macadamia nuts, or sliced almonds (NOT slivered since they are still too big/thick).
  • 1 1/3 cup almond flour– We chose finely milled almond flour in this recipe since it has a lighter, powderier consistency. Almond meal has a grain size that is a bit too large, which may prevent the biscotti from compacting correctly.
  • 2 tbsp ground golden flaxseed meal– Flaxseed meal gives a wonderful dimension to this dish with its warm, golden taste.
  • 3 tbsp coconut flour– This item, like almond flour, is essential. It will aid in the thickening and binding of the biscotti.
  • 1.5 teaspoon of baking powder
  • 1/2 teaspoon pink Himalayan salt– Himalayan salt enhances the sweetness of dishes without being excessively refined and causing blood pressure to rise.
  • 1 cup erythritol– Erythritol is a low-carb sweetener that serves as a sugar substitute in this recipe.
  • 25 drops liquid stevia– We like to use a combination of stevia and erythritol since they complement each other well and don’t upset the stomach.
  • 2 large eggs
  • 1/2 cup melted butter– If possible, use grass-fed butter like Kerrygold. It has a deeper taste and a beautiful golden hue that really comes through in the recipe.
  • 1 tsp vanilla extract– Vanilla is essential. Even while it may not seem like much, a dash of vanilla provides a wonderful touch of sweetness and taste.

The First Steps

Preheat the oven to 350 degrees Fahrenheit. Then Using parchment paper or a silpat liner, line a baking sheet (Large baking sheets work best). Silpat mats are our favorite since they offer a non-stick surface with no waste. After that, we’ll roast the almonds. Spread them out on a separate baking sheet and toast for 10-12 minutes in the oven. Remove the cooked goods from the oven and set aside to cool. After they’ve cooled, cut them up and put them away.

Changing it Up

Whisk together the dry ingredients in a medium mixing basin. The two flours, flaxseed, baking powder, a sprinkle of salt, and erythritol are all required. Using a hand mixer, whisk together the eggs, stevia, melted butter, and vanilla extract in a separate dish. Mix in the dry ingredients until they are completely combined. Allow the batter to rest for 5 minutes after folding in the cooled, chopped almonds. Allowing the dough to rest allows the coconut flour to absorb some of the liquid, resulting in a more structured dough.

Baking

Begin by splitting the dough in half to prepare it for baking. Place half side by side on a large baking sheet coated with parchment paper, allowing a few inches between them (dough will spread out when cooked). Make a log out of each half. Preheat oven to 350°F and bake for 30 minutes, or until golden brown and firm. Allow 20 minutes for the “cookie base” to cool. Then, carefully slice the “loaf” into 12-inch thick pieces using a serrated knife. You don’t want to break them in two, so be cautious while cutting.

Round 2 of baking

It’s down to the wire! Place the slices back on the baking pan, cut side down, and bake for another 15–20 minutes. When placing the sliced cookies back on the baking sheet, be cautious not to shatter them. Even if you cut them on the sheet, be sure to turn them gently. Remove them from the oven after they’re done and gently browned, and set them aside to cool. After 10 minutes on the baking sheet, transfer to a wire rack to cool entirely. The longer they are allowed to cool, the crispier they will get.

Instructions:

  • Preheat the oven to 350 degrees Fahrenheit. Using parchment paper or a silpat liner, line a large baking pan.

  • Cut the dough in half. Place half on a large cookie sheet side by side, allowing a few inches between them (dough will spread out when cooked). Make a log out of each half.

  • Preheat oven to 350°F and bake for 30 minutes, or until golden brown and firm. Allow for a 20-minute cooling period. Cut into 12-inch thick pieces using a serrated knife.

  • Bake for another 15–20 minutes with the cut side down on the baking sheet. When transferring the cut cookies to the baking sheet, be cautious since they may easily shatter.

  • Remove from the oven and rest for 10 minutes on the baking sheet before transferring to a wire rack to cool fully. The longer they are allowed to cool, the crispier they will get.

  • On your counter top, keep in an airtight zip top bag. Enjoy!
