Thai Chicken Lettuce Wraps with Peanut Dressing

Chicken is one of my favorite meats. I love the taste of chicken. In fact, the only thing that ever scares me about eating chicken is the cleaning afterward. There are so many different ways to cook chicken; I find myself making variations on recipes all the time. I’ve got my favorite ways to prepare chicken, but I also love to try new recipes and experiment with flavors.

It’s no secret that I love Thai food, and if you’ve been following me on Instagram, you’ve seen a lot of pictures of me eating Thai food. Since I love spicy food, I’m always looking for ways to spice up my food. One of my favorite ways to do that is with the use of jalapeños. My latest favorite is using them in my Thai Chicken Lettuce Wraps with Peanut Dressing.

I like to make simple and quick Asian dishes, and I can say that this recipe, which uses the peanut butter dressing, is one of my favorites. It’s a convenient and tasty dish, served in lettuce wraps and easy to make.

With a tasty and colorful Thai chicken lettuce wrap with peanut sauce, I’m continuing my healthy food series. When my dish is bright and attractive, I believe it tastes better as well. That makes sense since it is said that you eat with your eyes first. These Thai Chicken lettuce wraps have a bright color palette, rotisserie chicken makes them fast and filling, and the peanut dressing is delicious!

These lettuce wraps take me back to a time when I wasn’t such a terrific chef! My buddy Monique and I used to go to The Cheesecake Factory all the time when we lived in Las Vegas. The Thai Chicken Lettuce Wraps were our favorite meal to share. We decided to cook them at home one day, and I was chosen to do it, presumably since I’m Thai. Let’s just say they didn’t work out all that well! You’re probably wondering to yourself, “How can you screw up lettuce wraps?” They’re served with rice noodles at the Cheesecake Factory, and when we attempted to recreate them at home, the noodles turned into a huge sticky blob! Thankfully, during the last ten years, I’ve picked up a few tricks and can now confidently claim that I’ve improved as a chef. These lettuce wraps would be perfect for Monique!

I didn’t include noodles to make these Thai chicken lettuce wraps low-carb, and I didn’t want to chance making another noodle blob. Instead, I created a killer $$$ Peanut Dressing to pour over the top. This dressing is really delicious and will improve the flavor of nearly anything! It’s been used in salads, quesadillas, steak, and as a vegetable dip. The sauce will keep for approximately 5 days in the fridge, but you’ll have a hard time keeping it that long since you’ll want to eat it with everything!

Thai Chicken Lettuce Wraps with Peanut Dressing

I’ve been using rotisserie chicken in a lot of my dishes, as I stated in my last article. I like how it saves time and tastes wonderful. Although the vegetables for the Thai chicken lettuce wraps take some preparation, you can chop and dice a big amount on Sunday, store it in separate containers, and have it ready for lunch or supper throughout the week. You may prepare your own grilled or baked chicken, but I used rotisserie chicken to save time. Assemble the lettuce wraps by filling them with baby or butter lettuce, toppings, and a dab of the wonderful peanut sauce. At the end, I added some chopped honey roasted peanuts for a lovely sweet crunch. Enjoy!

Thai Chicken Lettuce Wraps with Peanut Dressing

Ingredients  

Dressing with peanuts: (This makes about half a cup, you can double it if you want more)

Instructions 

Dressing with peanuts:

  • To make it simpler to combine, warm the peanut butter in the microwave for 15 seconds. Except for the water, combine all of the ingredients. Mix thoroughly, then add 1 tablespoon of water at a time until you achieve the required consistency.

Assembly:

  • Place one or two cleaned lettuce leaves in the center, then top with chicken, purple cabbage, carrots, cucumbers, green onion, and cilantro leaves. Top with a lime wedge, a sprinkle of Peanut sauce, and chopped honey toasted peanuts.

 

Lettuce wraps and peanut dressing are two great things that go great together. If you need to get kids to eat vegetables, this is a great way to do it. You can add a variety of things to a lettuce wrap, so everyone can find something they like. They are easy to make, fast to make, and easy to eat..
