I grew up eating a traditional casserole made with chicken or beef and pasta, but when I started making the transition to a vegetarian lifestyle, I found myself making a lot of casseroles that were just as delicious, but far more nutritious. Here’s a really simple, one-pot casserole that can be made on a weeknight, and tastes pretty darn good. I’ve added a little extra spice in this version, but feel free to make it as mild or spicy as you like.

One of the more popular dishes at my house is black bean pepper jack casserole. My husband and daughter both love it, so I figured I would convert it to vegetarian and vegan. The original casserole is made with cheddar cheese and cream of mushroom soup. I didn’t want to use cream of mushroom soup because I am avoiding dairy, so I decided to substitute the cream of mushroom soup with sour cream. This Yummy Sweet Potato Black Bean Casserole is packed of delicious tastes and fresh ingredients, making it healthy, tasty, and satisfying. Diced sweet potato, thick salsa, shredded cheese, and black beans combine with incredible Mexican tastes and little tortilla pieces to provide a delicious vegetarian supper alternative for today.
To be honest, this meal came together by chance. I was rummaging in the fridge and discovered that all I had were sweet potatoes, salsa, and cheese. I didn’t use black beans the first time I cooked it. Something was lacking in the meal, and I knew I needed more nourishment. It evolved into the recipe below over time. I can’t think of anything I’d alter or add since it’s so wonderful!
Is it important what kind of tortillas I use?
Certainly not. In our home, we always use flour tortillas, so that’s what I go for when I’m cooking. You may use whatever kind you happen to have on hand! When preparing meals that require rolling tortillas, I think that flour tortillas are much simpler to work with and manage than corn tortillas.
Is it possible to add meat to this dish?
Yes! In the past, I’ve prepared it using a pound of cooked ground beef. If you chose to prepare it, it is wonderful. Just cook the ground beef ahead of time and drain it well. Then, add the meat to the sweet potato mixture and cook according to the recipe’s instructions. If you’re going to add meat, make sure it’s cooked first before mixing it in with the rest of the ingredients.

- Sweet Potato
- Beans, black
- Salsa
- Cheese
- Seasoning for tacos
- Taco Tortillas on the Street
- Juice of Lime
- Corn on the Shoe Peg
To prepare our Sweet Potato Black Bean Casserole, follow these steps:
Preheat the oven to 400 degrees Fahrenheit.
Set aside the tortillas, which should be cut into tiny pieces. Cut the onion and sweet potato into tiny pieces that are easy to eat. They will not cook all the way through if you leave them too big. If you want a larger sweet potato, dice it and cook it for 4 minutes in the microwave beforehand. The parts will soften and cook more evenly as a result of this.
Toss the sweet potato chunks with the drained black beans, chopped onions, salsa, spices, and tortilla crumbs in a mixing dish. Make a thorough mix.
Pour into a greased 13×9-inch baking dish. Bake for 35 minutes with the grated cheese on top.
Remove the dish from the oven and serve!
This meal is one of the best. I’m typically a big meat eater, but this dish totally filled myself and my family. The cheesy component was wonderful, and the salsa brought the tastes together well. The chunkier the salsa, the better in this meal! Canned corn is another excellent addition since it adds a delicious, sweet flavor. Don’t be scared to add as many additional vegetables as you like to make it as hearty as you want!

Ingredients
- 2.5 cups sweet potato, diced
- 1 1/2 CUP CHEESE, SHREDDED
- Salsa (1 1/2 cup)
- 1 drained can of black beans
- 1 Shoepeg Corn Can
- 1/2 cup purple onion, chopped
- 1 tsp taco seasoning
- 1 lime (juiced)
- 5 tiny squares of street taco tortillas
Instructions
- Preheat the oven to 400 degrees Fahrenheit.
- Sweet potatoes should be diced into tiny bite-size pieces.
- Combine the onion, lime juice, and taco seasoning in a large mixing basin.
- Drain the black beans and corn, then combine them with the onions.
- Stir in the sweet potatoes and salsa to the bean mixture.
- Finally, cut the tortillas into tiny pieces and toss them into the mixing bowl.
- Spread the mixture into a greased 9×13-inch baking dish and sprinkle with shredded cheese.
- Preheat oven to 350°F and bake for 25 minutes.
- Serve!
Notes
*If you want the sweet potato chunks to be extra soft, cook them in the microwave on high for 4-5 minutes before adding them to the mixture. They have a little crunch from this recipe.
