Preheat the sous vide at 133 degrees Fahrenheit. This will produce our preferred doneness, which is pink in color and extremely juicy. If you like your burgers rare, choose 126°F. You may raise the temperature to 158°F if you want your burger to be more done, with just a touch of pink.
