  • 900 grams of 20 percent fat ground beef is suggested.

  • Preheat the sous vide at 133 degrees Fahrenheit. This will produce our preferred doneness, which is pink in color and extremely juicy. If you like your burgers rare, choose 126°F. You may raise the temperature to 158°F if you want your burger to be more done, with just a touch of pink.

  • If you have a meat grinder, it is recommended that you grind your own beef. If you don’t have the necessary equipment, purchase pre-made ground beef.

  • Ground beef and egg should be mixed together in a basin. (You may either lightly whisk the egg or simply break it into the bowl.) Mix until the egg is completely integrated, using your hands or a spatula.

  • Use your scale to divide the meat into 200-gram patties.

  • Press the meat into a 4″ (105 mm) ring mold to form the patties. This will result in a completely uniform patties. If you don’t have a ring mold, form the patties into a ball first to eliminate any air and fractures. Flatten the ball between your flat hands, pinching the sides into form with your thumbs.

  • Season patties with salt and pepper just before cooking. Fill gallon-sized ziplock-style bags with the mixture. To prevent overpopulation, we make two burgers each bag.

  • Cooking time varies depending on the thickness of your patties, ranging from 15 minutes (for a 0.5 in / 1.3 cm thick burger) to 30 minutes (for a 1 in / 2.5 cm thick patty). However, you may keep them in the water for up to an hour and they’ll still be OK.

  • Do something else! : With sous vide, you don’t have to worry about your patties. You may leave them in the water while you prepare the toppings, change the music, or pour a few drinks. Your burgers will be ready to consume whenever you are.

  • Allow burgers to cool to room temperature while you assemble your condiment plate. When you sear them, this will help them retain their form.

  • Sear patties on a blazing-hot grill! : Place patties on a hot grill for 45 seconds to sear. Flip, add cheese if desired, and sear for 30 seconds longer. To melt the cheese, cover and heat for a further 15 seconds. NOTE: Is there no grill? It’s not a problem. Burgers may also be finished under the broiler or in a skillet on the stove.
