I like cooking soups in the slow cooker since it is a completely hands-off procedure after the ingredients are prepped. Allow the slow cooker to work its magic, integrating flavors and perfectly cooking the ingredients.
I like sharing healthy, low-cost recipes with others. Soups are ideal for this since one dish feeds a large number of people.
I’ve added the standard additions like garlic and chicken stock to this traditional soup combination of potato and leek. After it’s finished cooking, I add cream and cheese to really bring out the flavor.
The most difficult aspect of dealing with leeks is that they are very filthy, particularly in the top portion of the vegetable. The dirt seems to find its way into every crack and crevice.
So the first step must be to thoroughly clean it. It’s simple: I thinly slice the leeks, then place them in a colander and put them under running water while separating the layers with my fingers to ensure everything is properly washed.
I do precook the leeks to soften them and infuse them with garlic flavor. Allow them to soften but not color; you’ll notice that they begin to sweeten and lose their oniony odor.
Then, in a slow cooker, combine all of this with the other ingredients. I cook mine on low for around 5 hours, but you can decrease the time by cooking it on HIGH or using the pressure cook feature if you have a multi cooker, and it will be ready in about an hour.
There is some disagreement over whether blending potatoes in a soup causes it to become “gluey,” but you may utilize this to your advantage; it produces a creamy finish, and since there are so few potatoes in this recipe compared to liquids, it works nicely.
To prevent the starch in the potatoes breaking down too much, mix less rather than more. In a good restaurant, the soup may even be served without being blended and instead passed through a fine sieve. But we’re all about making things simple around here!
This soup is finished with cream and cheese. This gives the herbs and leeks a wonderful flavor balance. If you want a thicker soup, a pinch of cornflour may be added towards the end.

Today I served the soup with croutons, which are very simple to prepare. Using just a few slices of white bread. The more stale, the better, and thinly chopped and fried on the stovetop in a little butter — very simple!
If your bread is still fresh, dry it in the oven for a few minutes before pan frying it. Pan frying is simpler than baking since you can control and monitor the color of the croutons.

Simple and traditional Potato & Leek Soup in the Slow Cooker
Ingredients
- Butter (25 g)
- 2 big leeks, white and light green portion only
- 3 teaspoons/cloves minced garlic
- 680 g potatoes (about 5 medium)
- 2 tablespoons dried oregano
- 2 tablespoons dried thyme
- 1 teaspoon kosher salt
- a half teaspoon of pepper
- a few of bay leaves
- 1 litre chicken stock (4 cups)
- 1 quart cream
- 200 gram grated cheese
Optional
- 1 to 2 teaspoons cornflour
Instructions
- The white and light green portions of the leeks should be finely sliced.
- To remove any grit and debris from between the layers, rinse thoroughly using a sieve or colander.
- Melt the butter in a frying pan over a medium heat.
- Add the leeks to the melted butter and cook, stirring occasionally, until they soften, about 4-5 minutes.
- When the onions are cooked, add the garlic and cook for another minute.
- Fill your slow cooker halfway with the leek mixture.
- Add the potatoes to the slow cooker after peeling and dicing them into pieces.
- Combine the oregano, thyme, salt, pepper, and bay leaves in a large mixing bowl.
- Pour in the chicken stock and give it a good swirl.
- Cook on LOW for 5 hours, or until the potatoes are cooked, with the cover on the slow cooker.
- Remove the bay leaves and toss them out after the dish is done.
- Blend the soup with a stick blender until it is totally smooth.
- If you want a thicker soup, take 1/3 cup of the broth and mix with the cornflour until no lumps remain. Return the cornflour mixture to the soup and stir thoroughly.
- Stir the cream and cheese into the soup until it is fully combined.
- Serve with croutons or crusty bread.
- Refrigerate any leftover soup. Instructions for freezing may be found below.

It’s recommended not to freeze soup with cream in it; if you want to reheat the soup later, add the cream once it’s been thawed. To freeze the soup, mix as directed above, chill, and store in an airtight container for up to 3 months.
