This recipe is based on my simple and wonderful Pulled Pork on the BBQ – I figured if the flavors work well with pork, they should work well with chicken, and they do! I’m very happy with this one since it just calls for four ingredients.
Cooking chicken in the slow cooker may be challenging since you don’t want the chicken to dry out. After all, we usually hope for tender meat when using a slow cooker. You can’t go wrong when cooking with this sweet, uncomplicated sauce.

See how simple and fast that is. I use a basic type of BBQ sauce, but you may use anything you want; a good sweet BBQ sauce would add a great touch. Use a smoky or spicy BBQ sauce instead if you like.
The optimum cooking time for this one is about 6 hours on LOW, or when the chicken is ready to shred and fall apart. If you’re short on time, you may do it on high for 3-4 hours.
After it’s cooked, I just pull the flesh apart with two forks, thus the name Pulled Chicken! Pulled pork is a term used to describe meat that has been basted and cooked slowly in a slow cooker or a smoker. The term “shredded chicken” refers to the meat’s consistency.
I chose chicken thighs since I believe them to be a more flavorful and tender cut of chicken, but you could also use chicken breasts as long as they are cooked till soft and not overdone.

This dish is extremely simple to make, taking less than five minutes to complete. The most time-consuming step is carefully chopping the onions and garlic – or using store-bought minced garlic, as I do!
Then it’s only a question of pouring the BBQ sauce over the chicken, onion, and garlic, stirring to combine, and setting the slow cooker to work. So simple!
You can serve this in a variety of ways; it’s so soft and juicy that it goes well with rice, it’s delicious on bread rolls with coleslaw, or you can use it to make easy enchiladas, like I did.
To prepare these, I simply took tortillas and stuffed them with a piece of the chicken, then rolled them up and placed them in a baking sheet. Then I added additional BBQ sauce and plenty of cheese, and baked it in a moderate oven until the cheese was nice and brown.
Serve with a salad! So delectable.

BBQ is a delicacy. Pulled chicken cooked in the slow cooker is soft and flavorful.
Ingredients
- Chicken Thighs, skinless and boneless, 800 g
- 375ml 1 1/2 cup BBQ sauce
- 1 finely diced onion
- 2 tablespoons minced garlic, 2 cloves
Instructions
- In a slow cooker, place the chicken thighs.
- Add the onion, garlic, and finely diced onion to the chicken.
- Pour the BBQ sauce over the top and toss to incorporate.
- Set the slow cooker on LOW for 6 hours, or until the chicken is falling apart tender.
- During the cooking process, stir once or twice.
- Turn off the slow cooker and shred the chicken with two forks.
- Serve with rice, burgers and coleslaw, or enchiladas as directed.
- Refrigerate any leftover pulled chicken.
- Can be frozen after it has cooled.

If time is limited, cook on HIGH for 3-4 hours.
In the slow cooker, never use frozen chicken.
