This slow-carb chicken vegetable stir-fry is a quick and simple family meal. It takes around 30 minutes to make and can be made using items you probably already have in your refrigerator. It’s good enough to eat every week! You may even make your own vegetable combination; we have a variety of veggies mentioned here, but carrots, snow peas, and even edamame can all be added to the mix.
Ingredients
- 1 entire, diced onion
- 2 full green onions, cut diagonally
- 2 minced garlic cloves
- 2 entire red bell peppers, julienne-cut (can substitute green, orange, yellow, or a mix)
- 12 pound sliced mushrooms
- broccoli florets, 1 pound bag
- a pair of chicken breasts
- 4 tbsp. olive oil
- 12 cup soy sauce (if this is too much, reduce it down to 14 cup)
- a pinch of red pepper flakes (or more to taste)
- season with salt and pepper to taste
Instructions
If the chicken breasts are too thick, use a meat pounder or the back of an iron skillet to pound them down to a uniform thickness (approximately 3/4 inch).
Salt, pepper, and red pepper flakes are used to season the chicken breasts. In a large pan over medium heat, heat 2 tbsp oil and fry chicken breasts until fully done, approximately 5 minutes each side. Place the chicken breasts on a chopping board to rest while you finish the remainder of the meal.
Heat the remaining oil in the same skillet over medium-low heat. Cook for 2 minutes after adding the onions and garlic. Cover with a lid after adding the broccoli. Allow for 5-10 minutes of steaming.
Toss the broccoli with the other veggies. Cook, turning occasionally, until the onions and garlic are browning and the broccoli is tender but firm.
Chop the chicken into little pieces to make it easier to eat. Cook until the chicken is cooked through, along with any collected juices and soy sauce. If required, season with additional salt and pepper to taste.
Remove from the heat, top with green onion slices, and serve immediately!
