Because this recipe does not call for brown sugar, we decided to flavor ours with vanilla and a smidgeon of almond extract. Instructions:

Preheat the oven to 350 degrees Fahrenheit. Set aside an 8-inch cast iron skillet that has been greased with the oil of your choice.

Combine erythritol, coconut flour, and salt in a small mixing dish. Remove from the equation.

Whisk together eggs, almond butter, melted cacao butter, stevia, and extracts in a second larger mixing dish.

Mix in the dry ingredients until everything is well blended. Combine the coconut and chocolate chunks in a mixing bowl.

Spread the batter in a uniform layer across the preheated skillet.

Cook for 20 minutes, or until golden brown. Allow 10-15 minutes to cool before serving. In a zip top bag, store in the fridge.
