Ingredients

1/2 pound (225 gram) peeled, deveined, and ground shrimp    
a quarter teaspoon of salt    
black pepper, 1/4 teaspoon    
2 green onion stalks, chopped    
4 quarts water    
2 cups grated purple yam (fresh) or 1 package grated purple yam (frozen)    
2 tblsp. fish sauce    
sugar (one teaspoon)    
1/3 cup sweet basil leaves, chopped (option)    

Purple Yam Soup Recipe Instructions

  1. Put the shrimp, salt, black pepper, and 12 tablespoons green onion in a small bowl, mix well, and leave aside.
  2. Fill a soup pot halfway with water and bring to a boil.
  3. Cook until purple yam is soft by adding it to the hot water and stirring it thoroughly.
  4. Add the marinated shrimp and toss well until the shrimp develop a deeper pink hue.
  5. Fish sauce and sugar are used to season the dish.
  6. Finish with the basil leaves and the leftover green onion.

Serve immediately with rice.
