- 4 big baked potatoes, sliced into strips like French fries
Beer Batter
- 1 bottle of beer (12 oz.)
- 2 cups flour (all-purpose)
- The following is a recipe for 1/2 teaspoon house seasoning.
- 1 1/2 pound cod fillets, peeled and boneless, and cut crosswise into 1-inch-wide strips (5 to 6-inches long)
Seasoning for the Home
- 1 pound of salt
- 1 teaspoon black pepper
- a quarter cup of garlic powder

Preheat the oil in a Dutch oven to 375 degrees F. Preheat the oven to 225 degrees F.

Fry the potatoes for about 10 minutes, or until golden brown, then remove using a slotted spoon or spider.

Keep heated in a low oven while you cook the fish.
Batter:

Pour 1 bottle of beer into a large mixing basin. 1 1/2 cup flour, sifted into the mixing bowl, whisked in gently until just mixed, then add in House Seasoning.

Dry the fish and season both sides with salt and pepper before dredging in the remaining 1/2 cup flour.

Coat the fish pieces in beer batter and place them in the oil as they are coated.

Fry the fish for 4 to 5 minutes, flipping often, until golden brown and cooked through.

Transfer to a baking sheet lined with paper towels and keep heated in the oven.

Fry the remaining fish in batches, bringing the oil temperature back up to 375 degrees F between batches.

Fish should be served with French fries.

To make the House Seasoning, combine all of the ingredients in an airtight container and keep for up to 6 months.
