RECIPE SUGGESTIONS FOR MY BREAD MACHINE
The key weapon for substituting salt and any sodium-filled baking powder is Hains Featherweight low sodium baking powder. This is what serves as the yeast’s needed leavener. This is a considerable savings over conventional baking powder with salt, which is very rich in sodium. The one disadvantage to baking your own bread is that if left out for a few days, it will mold. This is due to the lack of salt and other preservatives found in supermarket bread. So, after cooling on a wire rack, I slice everything up and put it in a zip lock bag with a paper towel in the fridge. The paper towel helps to keep any moisture in the bag to a minimum. 90% of the time, I have used it all up before it has gone bad in this way. You can also keep it in the freezer for extended lengths of time, and just toasting a slice or two when you take it out can bring it back to life.

Make sure you use a kitchen scale to measure your flour and hand whisk the dry ingredients together in a mixing bowl to aerate them. This will eliminate the frequent problem of machine bread density. You might be more cautious, but I’ve never had trouble doing this simple measurement technique.
