The key weapon for substituting salt and any sodium-filled baking powder is Hains Featherweight low sodium baking powder. This is what serves as the yeast’s needed leavener. This is a considerable savings over conventional baking powder with salt, which is very rich in sodium. It was difficult to put anything on it without it breaking apart when I first began baking bread since it was extremely dry and crumbly. Experiment with various herbs and spices to see what you can come up with. Plain crystallized white sugar may easily be replaced with honey or brown sugar. It also provides a delicious low-sodium white bread taste characteristic. To enhance a “spicier” flavor, I usually add a few tablespoons of onion or garlic powder.


Use flour measuring cups and don’t cram the flour in the cup while measuring flour. Otherwise, you’ll use much more flour than you need, resulting in a denser loaf. Simply spoon it into the cup carefully and loosely, then shake the cup to level it. When all of my dry ingredients (excluding yeast) are measured, I combine them in a mixing bowl and whisk them together by hand to integrate them and “loosen” the flour. It should be light and fluffy with no clumps.

Bread flour has a greater gluten content, resulting in taller, lighter loaves. If you use all-purpose flour, which has less gluten than bread flour, your loaves will not rise as high and have a denser inside.

The one disadvantage to baking your own bread is that if left out for a few days, it will mold. This is due to the lack of salt and other preservatives found in supermarket bread. So, after cooling on a wire rack, I slice everything up and put it in a zip lock bag with a paper towel in the fridge. The paper towel helps to keep any moisture in the bag to a minimum. 90% of the time, I have used it all up before it has gone bad in this way. You can also keep it in the freezer for extended lengths of time, and just toasting a slice or two when you take it out can bring it back to life.

  • Except for the yeast, combine all of the dry ingredients in a mixing bowl.

  • In the bread pan, combine the water and oil. Except for the yeast, mix together the dry ingredients.

  • In the center of the flour, make a tiny divot and place the yeast in the indentation.

  • In two corners of the pan, place 12 slices of no salt butter on top of the flour.

  • Place the bread pan in the bread machine and secure it with a push or twist. Put the cover back on.

  • Use a 1.5 pound loaf of basic bread with a medium crust cycle (3 hrs 15 minutes)

  • Remove the bread pan using oven mitts after the bread is done. Shake the bread pan upside down to release the loaf.

  • Allow 30 minutes for the bread loaf to cool on a wire rack before slicing.

Make sure you use a kitchen scale to measure your flour and hand whisk the dry ingredients together in a mixing bowl to aerate them. This will eliminate the frequent problem of machine bread density. You might be more cautious, but I’ve never had trouble doing this simple measurement technique.
