Churro Cheesecake is a new low carb cheesecake that uses churro swirls to make a delicious, low carb dessert. I’m not the first to make this recipe, but I wanted to share it because it tastes so good.

Churros Keto:
Topping for keto cheesecake:
- Whole cream cheese, 24 oz (3 8 oz. packets)
- a cup of suc
- 3 eggs
- a third of a cup of Vollfett-Sauerrahm
- lemon zest (about 2 tablespoons)
- vanilla extract (two tablespoons)
- a half teaspoon of cinnamon

To make churros, follow these steps:
Combine the almond flour, coconut flour, whey protein powder, and xanthan gum in a medium mixing bowl.

Melt the butter, brown keto sweetener, granulated keto sweetener, vanilla extract, and water in a small saucepan over medium-high heat. Allow for 2 minutes of cooking time. If you allow it to boil, it will turn into caramel.

Toss the dry ingredients with the melted butter and ketosis mixture. To make a churro batter, whisk together the flour, salt, and eggs until smooth. Fill a piping bag with the dough or a big ziplock bag with the corner cut off.

Preheat the avocado oil to 350 degrees in a big skillet or Dutch oven over medium-high heat. While the oil is heating up, place the churro strips in it. You may cut the dough from the bag using scissors. Fry the churros for 1 to 2 minutes, or until lightly browned. With a tiny spoon, remove them from the oil and put them on kitchen paper to drain excess oil. Carry on with the rest of the dough in the same manner.

Crumble the churros with your hands or a food processor after they’ve cooled. You’ll receive approximately 3 cups of churro crumbs from the box.

To make the churro cake, combine the following ingredients in a mixing bowl.
Preheat oven to 300 degrees Fahrenheit. Using butter, grease a 9-inch baking dish. Combine 2 cups churro crumbs, melted butter, cinnamon, and granulated keto sweetener in a mixing bowl. Firmly press the mixture into the springform pan’s bottom. For 10 minutes, bake the churro cake.

To make the cheesecake topping, combine the following ingredients in a mixing bowl.
Combine the cream cheese and keto sweetener in a large mixing bowl. The eggs, cream, lemon zest, vanilla essence, and cinnamon are then added. Stir well and, if required, scrape down the sides.

Fill the springform pan with the cheesecake batter and the pre-baked churro crust.

Wrap the springform pan in aluminum foil and put it in a baking dish for the bain-marie. Half-fill the springform pan with boiling water to reach halfway up the sides.

Bake the cheesecake in a water bath in the oven for 70-90 minutes at 300 degrees. When the top of the cheesecake is gently browned and the middle rattles slightly when you shake the pan, it’s done. Refrigerate for at least 6 hours or overnight in the baking dish before serving.

Toss in some cinnamon sugar:
Combine the cinnamon and granulated keto sweetener with the leftover churro crumbs (about 1 cup). Before serving, sprinkle over the cheesecake. Have a blast!
