Ingredients for Tarhana Dough (Homemade)
- 2 pounds of tomatoes
- 2 kilos onion bulb
- 2 kilos of red pepper (meat)
- 1 pound chickpeas, boiling
- parsley, 1 bunch
- 1 bundle of mint leaves
- 1 pound of strained yogurt
- a quarter cup of rock salt
- flour (four kilos) (to be added gradually)
- 1 teaspoon yeast (dry)
The Secret to Making Homemade Tarhana Dough
If it’s hot outside, you may ferment tarhana without using dry yeast and sour it with heat. Otherwise, using dry yeast to speed up the fermentation process is advised. If the dough becomes excessively wet during the holding step, a little quantity of flour may be added. Depending on the warmth of the sun and where you are drying, the drying process may take days. You may use the surplus water from the soup-making process to boil the veggies. You may also finish the drying process in a semi-shade area to keep the tarhana’s color.
Dough Cooking Suggestions for Homemade Tarhana
You may simmer the veggies you prepare in a pressure cooker for Tarhana in a deep pot for a shorter period until they soften.
How to Make Tarhana Dough from Scratch
- Tomatoes should be chopped into big chunks. The fleshy red peppers should be cut in half and chopped into big pieces.
- Peel the bulbs and divide them into four equal pieces. Remove the parsley and mint leaves and wash them well before drying.
- In a big saucepan, bring chickpeas, chopped bulbs, paprika, and tomatoes to a boil. Add a little quantity of water and simmer on low heat until the vegetables release their juices.
- At the conclusion of the cooking procedure, remove the puree mixture from the heat. Warm the water by soaking it at room temperature. Allow the fragrances to mingle before adding the finely chopped greens.
- To remove excess water, strain the mixture over a fine-mesh screen. Pass the mashed potato mixture through a food processor.
- Mix in the yogurt and rock salt. If you’re going to use dry yeast to help with the sourness, do it now. Gradually add the sieved flour and knead until you have a mixture that resembles pastry dough.

- Take the dry tarhana to the food processor, which should be fully wet on the borders and somewhat damp in the center. Extract until the mixture is pulverized. Repeat the procedure with the remaining tarhana doughs in big pieces.
- Continue to dry the powder tarhana in the shade by dividing it into big trays and mixing in between. Keep the vented dust tarhana in clean glass jars with tight-fitting lids and keep in a cold, dry location.
