My children are fortunate in that they are experimental eaters. Sushi, oysters, shellfish, steak… you name it, they’ll eat it! I understand that this isn’t always the case for the majority of individuals. My children often make meal requests that vary from one another. My younger brother recently requested shrimp, but without the “sauce.” So, after a lot of trial and error (either too much spice or bad taste), I came up with this! It’s not too hot since we use our own blackened spice, there’s no sauce, and it’s delicious served over angel hair pasta or warm rice! To top it off, it’s EASY TO CLEAN UP and it’s HEALTHY!

WHERE DOES THE TERM “BLACKENING” COME FROM?

To prepare our Healthy Blackened Shrimp Skillet, follow these steps:
Clean the shrimp and remove the tails first. Make sure they’re thawed before using if they’ve been frozen. After that, coat the shrimp with 1 tablespoon of blackened seasoning.
Cut the bell peppers into tiny pieces that are easy to eat. In all, you’ll have a bit more than 2 cups of bell peppers. Approximately 1/4 cup diced green onions
In a pan, combine all of the veggies and 1 tablespoon of blackened seasoning. Cook for 8-10 minutes over medium heat, or until peppers are cooked but not too soft.
Toss the veggies to one side of the skillet. Cook the seasoned shrimp in the pan, stirring frequently, until they are no longer transparent but still pink. It will take approximately 3-5 minutes to complete this task.
Combine all of the ingredients after the shrimp are completely cooked.
Serve and have fun! This is delicious served over rice or angel hair pasta. You may also wrap them in a tortilla and serve them over a fresh green salad.

- 3 teaspoons blackened seasoning (homemade)
- 2 tablespoons extra virgin olive oil
- 2 bell peppers, red
- 1 bell pepper, green
- 1/4 cup green onions, diced
- Combine the shrimp and 2 tablespoons blackening seasoning in a large mixing basin. To mix, stir everything together. Remove from the equation.
- 2 tablespoons olive oil, all bell peppers, green onions, and 1 teaspoon blackening spice in a pan over medium heat Cook for 8-10 minutes on medium heat.
- Push the veggies to the side and pour in the shrimp when they’re tender.
- Cook for 3-4 minutes, or until the liquid has evaporated.
- Serve by combining all of the ingredients. We serve this over rice, quinoa, or angel hair pasta.
