Celery is a versatile vegetable that can be used as a garnish or a main course. Here’s a recipe for a lighter, healthier take on classic fried rice.

Ham and egg fried rice is a classic, and many people love it. Ham and egg fried rice is a wonderful dish that’s easy to prepare, and it’s one of those dishes that you can cook and eat in a flash, and most people are happy with that.

There are lots of delicious ways to prepare rice, and this is one of my favourites. The key to this recipe is not to over cook the rice, so that the rice has lots of bitey little bits of rice and not a mushy mass. I also like to add some celery to the rice for the extra crunch.. Fried rice comes in a variety of flavors and may be prepared in a variety of ways. The celery leaves in the ham and egg fried rice provide a lot of flavor to the rice, and you don’t need to add cilantro as other fried rice recipes do.

Ingredients

4 cups leftover cold rice    
4 garlic cloves (or 2 tiny shallots and 2 garlic cloves) minced    
1 cup celery leaves, including the celery stem tip    
1/2 cup onion, chopped    
2 green onion stalks, chopped    
1 cup ham, chopped    
3 beaten eggs    
3 tablespoons oil (vegetarian) for stir-frying    

Sauce for stir-frying

a third of a spoonful of soy sauce    
1 tbsp sugar (about 1 tbsp sugar)    
1 tblsp sesame seed oil    
In a mixing dish, combine all ingredients and put aside.    

To prepare ham and egg fried rice with celery, follow these instructions.

  1. Increase the heat to medium-high and add the oil until it is hot.
  2. Stir in the garlic, shallots, and chopped onion until golden brown.
  3. Set aside the garlic, shallots, and onion, then add the scrambled eggs and heat until hard, then combine with the garlic mixture.
  4. Combine rice and egg mixes in a fry pan and stir fry until rice is heated.
  5. Stir in the stir fry sauce with the rice until everything is hot.
  6. Now add the celery and green onion to the fried rice, stir well, and season to taste.
  7. Turn off the heat.

Serve with lime juice and black or white pepper.
