Chocolate is added to a wonderful oatmeal cookie in Fudgy Oatmeal Cookie Bars. I like oatmeal cookies, but I really enjoy them with a hint of chocolate. The fudgy chocolate ganache layer in the center of these cookie bars is incredible. It’s also quite easy to make. If you wish to consume half of the fudge layer with a spoon, double the fudge layer. Or maybe it’s just me.
Making bar cookies is one of my favorite things to do since it eliminates the need to scoop and bake several trays of individual cookies. When I’m short on time, I prefer to bake cookie bars. From start to finish, this recipe takes approximately 30 minutes and produces enough cookies for a big audience!
Fudgy Oatmeal Cookie Bars Ingredients
Layers of Oatmeal Cookies
- 3 cups oats (quick)
- flour, 2 1/2 cups
- 1 teaspoon of baking soda
- 1 teaspoon of salt
- 1 cup softened butter
- 2 cups sugar (brown)
- 2 eggs
- 2 tsp vanilla extract extract
Layer of Fudge
- 2 tsp vanilla
- 1 can condensed milk, sweetened
- 1 1/2 cup chocolate chips (semi-sweet)
- 2 tablespoons butter
Fudgy Oatmeal Cookie Bars Recipe
Preheat the oven to 350 degrees Fahrenheit.
Combine the oats, flour, baking soda, and salt in a large mixing basin.
Whip the butter in a separate dish for 2-3 minutes until it is light and fluffy. Beat in the brown sugar for another 2 minutes. Continue to beat for another 1-2 minutes after adding the eggs and vanilla extract.
Mix only until the dry ingredients are barely mixed with the butter/sugar mixture. While you’re working on the chocolate coating, set it aside.
Over low heat, combine all of the chocolate fudge ingredients in a medium saucepan. Remove from heat after stirring until everything is melted and smooth.
2/3 of the oatmeal cookie dough should be pressed into the bottom of a prepared 9X13 baking pan. Spread the chocolate fudge on top of the oatmeal layer, then sprinkle the rest of the oatmeal cookie dough on top.
Bake for 20-25 minutes, or until a little browning appears on the top. Allow for full cooling before cutting. They can be kept and served at room temperature, but they’re also great straight from the fridge!
