Fried rice is one of my favorite comfort foods, and I love thinking up ways to make it more interesting. Many people add their favorite vegetables to their rice, but I prefer to add fruit. Recently my boyfriend and I went to a restaurant in a neighboring town, and ordered Fried Rice with Curry Pineapple. I knew the dish would be great, but I had no idea how much I’d love it.
If you’ve never tried this dish, then you’re in for a real treat! The sauce is more of a vinaigrette than a sauce. Curry Pineapple is used for the sauce, and as you can imagine, it complements the pineapple very nicely. The fried rice recipe used here uses pineapple.
Fried rice is a dish that you can make in many different ways. Some people like their fried rice sweet while others like it spicy. I prefer mine with sweet with a curry pineapple taste. I found this recipe on Allrecipes and it is a great thing to try. You can also use more or less ingredients according to your taste.

Ingredients
2 cups white rice, uncooked | ||
3 quarts water | ||
curry powder (1 tablespoon) | ||
2 tablespoons fish sauce (Asian) | ||
2 tablespoons fish sauce (Asian) | ||
1 tablespoon of extra virgin olive oil | ||
1 pound (900 gram) boneless cubed chicken meat | ||
1 sliced onion | ||
1 can pineapple chunks (20 oz or 570 g), drained |
Fried Rice with Curry Pineapple Instructions
- In a saucepan over high heat, bring the rice and water to a boil. Reduce heat to medium-low, cover, and cook for 20 to 25 minutes, or until the rice is soft and the liquid has been absorbed. Remove the cooked rice from the pan and set it aside.
- In a small bowl, combine the curry powder, fish sauce, and pineapple juice.
- In a large pan or wok, heat the vegetable oil until it shimmers over medium-high heat, then cook and stir the chicken and onion until the chicken is no longer pink and the onions are translucent, approximately 5 minutes.
- Cook and stir until the fried rice is hot, about 5 to 10 minutes, after adding the cooked rice, pineapple pieces, and curry mixture.
Note: Fried rice tastes best when the rice is prepared a day or two ahead of time.
