  • In a skillet over medium high heat, add the oil, garlic, and stir for 30 seconds before adding the cauliflower rice. If using frozen, cook without a cover until warmed through.

  • Turn off the heat and stir in the lime zest, lime juice, and chopped cilantro. Season with salt to taste.


Because the lime I used was very large, I only used half of it. However, if you want to have extra for meal prep, you can easily double the recipe.
