Chicken lollipops are a classic candy that gets a bit of a bad rep, yet those who know where to get them right will tell you they are great. Can you find out where they are?  I bet you can.  If you live in Europe, they are made by a company called Horn.  There are two places I know of that sell them: “Horn” in Germany, and “Horn” in the UK.  My favourite flavour was “chilli”, but I have an addiction to them…I just have to have one every time I go to London.

One of the best things about this blog was when I made my first recipe. I had just started my blog in May and I made a chicken lollipop with tangy chilli sauce. It was delicious.

Everyone’s favorite meal, chicken lollipop, is served as a beginning. Chicken wings are used to make chicken lollipops, which are formed like lollipops. I tried a lot of different versions and loved them all, but I’m not sure which one was the tastiest and crispiest. I used chicken wings that were in the shape of a chicken lollipop but were not correctly cut as a chicken lollipop, so they looked like tiny chicken legs. You may either have your butcher do it for you or do it yourself. I used breadcrumbs in this recipe; to make it crispier, I took 2 or 3 bread pieces and crushed them into bread crumbs in a mixer or food processor. I’ve also included a sauce recipe that works well with it; you may adjust the sauce to your preferences. You may use any technique of preparing sauce in my previous Chinese recipes and just pour or drizzle it on top, and serve as an appetizer or with any main dish.

Ingredients

    • 350 g chicken or 6 wings

Marinade

    • 1 teaspoon soy sauce
    • 1 tsp vinegar (optional)
    • 1 tbsp chili sauce
    • 2 tsp ginger and garlic paste
    • a pinch of salt (to taste) (optional)
    • 1 teaspoon chili powder
    • a pinch of ajinomoto (Chinese salt)
    • a pinch of pepper powder

Batter

    • 2 tbsp corn flour
    • 2 tbsp maida
    • 1/2 teaspoon chili powder
    • A pinch of Ajinomoto (optional)
    • 1/4 tsp to 1/2 tsp pepper powder
    • 1 teaspoon soy sauce
    • a pinch of salt (to taste) (optional)
    • a smidgeon of color (optional)
    • Egg – 1

Coating

    • 3 slices fresh bread for bread crumbs (dry ground in a coffee grinder or other spice grinder) OR pre-made bread crumbs

Sauce

  • 3 tsp. oil
  • 1/3 cup spring onion white and green parts (chopped)
  • 2 garlic cloves (chopped)
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon pepper powder
  • 1/2 teaspoon sugar
  • 3/4 teaspoon vinegar
  • a pinch of salt (to taste)
  • 1 tbsp tomato ketchup
  • 1 teaspoon soy sauce
  • A pinch of Ajinomoto (optional)
  • 3 tbsp chili sauce
  • 1/4 cup water

Method

Notes

  • If you don’t want to use bread crumbs as a coating, just cook it in the egg mixture batter.
  • If you want, you may leave out the Ajinomoto and simply use any of the other ingredients in the marinade or sauce.
  • In the sauce, you may also add chopped green chilies and chopped onions. Chilli may be added to the mix.
  • You may create whatever sauce you like, such as chilli sauce or Manchurian sauce, according to your preferences.
  • If you flip the chicken pieces too fast, the coating will peel away. Stir it infrequently with a spoon.
  • You may add chopped ginger, garlic, curry leaves, chopped onion, and then the other ingredients in the sauce and stir to combine; this will give the sauce a unique flavor.

 

Since you may not be familiar with the term, tangy in cooking refers to a kind of sourness that comes from an acidic ingredient (like lemon juice) and is often used to enhance the flavor of other ingredients. The tangy chilli sauce recipe below is a combination of chilli, garlic, lemon juice, vinegar, and some other ingredients to create a spicy marinade. The idea is to use a small (or thin) chicken breast and roll it in a soy paper or wrapping. Then, the meat is cooked in the hot oil for about 5 minutes per side, until it is nice and brown and the outside is crispy.
