One day, I got an idea to make cauliflower waffles using a pancake maker. I couldn’t find pancake mix that was 100% made of cauliflower, but I found a mix that contained coconut flour. I used this and it worked fine. However, the batter was a bit thicker than usual. So I decided to add a little bit of vinegar to thicken it up a bit. And the result? A very good tasting batter that I can’t wait to try again.

Waffles are an American breakfast staple, but as we all know, eating healthy doesn’t have to be boring. So here are some waffles that are actually good for you. You’ll be surprised at how good these waffles are! They’re made with cauliflower, which cooks up much more like a potato than you’d expect.

This is, as I have said, my favorite waffle recipe! The beauty of pancake and waffle batter, though, is that they may be used interchangeably. Keto macarons are one of our most popular recipes, and we know they’re also delicious as waffles. In addition, we just developed a recipe for delicious double chocolate waffles, which are ideal for supper or dessert!

Use this recipe as a starting point and experiment with various fillings. Mexican waffles with chorizo and manchego cheese or pepperoni and mozzarella pizza are two options. The options are limitless!

I’ve just lately been aware of waffles in a spicy light, and I’m afraid I’ll never go back. I used to be known as a waffle maker, which reflected not just my waffle addiction, but also my tolerance for waffles of various forms, sizes, and tastes.

Try these cauliflower waffles with bacon and cheddar for breakfast, brunch, or any meal!

6 medium waffles per serving

  • In a large mixing basin, combine all of the following ingredients.
  • Waffle iron should be preheated. Pour 1/3 of the mixture into a measuring cup, oil the waffle iron, and pour the mixture into the waffle iron’s middle. Press down on the mixture with the waffle iron to spread it out and finish cooking it. Rep till you’ve used up all of the mixture.
  • To taste, add sour cream, cheddar cheese, and chives. Have a blast!
  • This recipe makes 5 medium waffles or 3 big waffles. Furthermore, the quantity of flax meal required is determined on the moisture content of your mixture. We only required 1/4 cup, but you may need 1/2 cup – decide for yourself!
