This dish was created by Carin and has since become a favorite of ours. It’s very simple to prepare, works with nearly anything (and is delicious on its own), is full, and delicious! The kidney beans are a great addition since they give a little sweetness to the meal and help it to come together.
Instructions
In a mixing dish, combine the olive oil and vinegar. Season with salt and pepper to taste. Whisk everything together until it’s completely smooth. Combine the beans, cucumber, parsley, and tomatoes in a mixing bowl. Toss until everything is evenly covered. Serve.
Note: This stays nicely in the fridge, and the dressing continues to season the ingredients; in fact, I believe it improves with age.
