- 12 teaspoon sea salt, plus more salt to taste
- 12 teaspoon black pepper, freshly ground, plus more to taste
Instructions:
I blanch the broccoli before sautéing it in this dish. I adore veggies sautéed in garlic-infused olive oil, but these sautés can quickly transform fresh, crisp food into oily and mushy fare.
- A big saucepan of salted water should be brought to a boil. Cook for 2 minutes, or until the color of the broccoli intensifies. Transfer the broccoli to a large basin of cold water to chill entirely, using a slotted spoon. Drain and put aside the broccoli.
- Cook the green beans in the same saucepan of boiling salted water for 4 minutes, or until the color brightens.
- Drain and chill the green beans thoroughly in another big basin of cold water. (The veggies may be prepped up to 8 hours ahead of time.) Dry completely and store in a resealable plastic bag in the refrigerator.)
- Heat the oil in a large sauté pan over medium-high heat. When the pan is nearly smoking, add the garlic and 112 teaspoons red pepper flakes, and cook for 45 seconds, or until aromatic and the garlic is light golden.
- Remove the garlic from the oil with a slotted spoon and discard (do not overcook the garlic as it will give the meal a harsh flavor). Toss in the broccoli, green beans, and 12 teaspoon each of sea salt and black pepper to the oil, and cook for 5 minutes, or until the veggies are cooked through and crisp-tender. To taste, season with more red pepper flakes, sea salt, and black pepper. Place the mixture in a bowl and serve right away.
