Preheat the oven to 350 degrees Fahrenheit. Coat a 9×13 baking pan with nonstick cooking spray. Using parchment paper, line the bottom of the pan. This will aid in the cake’s removal from the pan after baking.

Combine almond flour, coconut flour, baking powder, and salt in a large mixing basin. Set aside after whisking together to mix. To prevent using too much almond flour and coconut flour, spoon them in and level off the scoop.

Cream the granulated sweetener and butter together with a hand mixer or a stand mixer. Slowly whisk in the eggs, heavy cream, sour cream, vanilla extract, and almond extract until well combined.

To make the buttercream icing, follow these steps:
Combine the butter, keto sweetener powder, vanilla, and heavy whipping cream in a mixing bowl. Mix the ingredients with a hand mixer for 3-4 minutes, or until a creamy frosting texture is achieved. If the frosting is too thick, add another teaspoon or two of heavy whipping cream and beat for another 1-2 minutes, or until the desired consistency is achieved.
Don’t let the high overall carb count fool you! We removed fiber and erythritol, the primary component in Swerve, from the overall carb count since they do not impact blood sugar in the same way that normal carbohydrates do. Once the sugar alcohols and fiber are removed, the net carbohydrates are much lower.
