To make the finest keto birthday cake, follow these guidelines:

    • To prevent the cake from sticking to the pan, spray it with nonstick cooking spray.
    • To prevent your cake from overbrowning, place a piece of foil over the pan while baking.
    • To make this cake even more wonderful, I used Lina’s keto buttercream frosting recipe. Allow the cake to cool fully before applying the icing.

This wonderful keto birthday cake tastes exactly like your favorite vanilla sheet cake, but without the extra carbohydrates and sugar.

Frosting: Buttercream

Preheat the oven to 350 degrees Fahrenheit. Coat a 9×13 baking pan with nonstick cooking spray. Using parchment paper, line the bottom of the pan. This will aid in the cake’s removal from the pan after baking.

Combine almond flour, coconut flour, baking powder, and salt in a large mixing basin. Set aside after whisking together to mix. To prevent using too much almond flour and coconut flour, spoon them in and level off the scoop.

Cream the granulated sweetener and butter together with a hand mixer or a stand mixer. Slowly whisk in the eggs, heavy cream, sour cream, vanilla extract, and almond extract until well combined.

While mixing on low, add in the dry ingredients. Scrape the sides of the bowl to ensure that all of the ingredients are well combined.

Add the batter to the baking pan, spread evenly with a spatula, and bake for 30-35 minutes in a preheated oven. If the cake begins to brown, cover it with aluminum foil to keep it from burning.

Before taking the cake from the pan, remove it from the oven and allow it cool fully.

To make the buttercream icing, follow these steps:

Combine the butter, keto sweetener powder, vanilla, and heavy whipping cream in a mixing bowl. Mix the ingredients with a hand mixer for 3-4 minutes, or until a creamy frosting texture is achieved. If the frosting is too thick, add another teaspoon or two of heavy whipping cream and beat for another 1-2 minutes, or until the desired consistency is achieved.

Don’t let the high overall carb count fool you! We removed fiber and erythritol, the primary component in Swerve, from the overall carb count since they do not impact blood sugar in the same way that normal carbohydrates do. Once the sugar alcohols and fiber are removed, the net carbohydrates are much lower.

Make your birthday one to remember!

I love how simple this cake is to prepare, and the fact that it’s sugar-free adds to the appeal. I gave it to my sons to test without telling them it was keto, and they devoured it! So go ahead and cut a piece for everyone in the family, then sit back and watch them fall in love with this keto birthday cake.

After preparing this keto sheet cake, my colleague Jenna had the following to say:

“This is so much fun, and I adore how low carb it is; after all, who doesn’t like sheet cake? The kids devoured this and didn’t seem to mind that it was low-carb. They often inquire whether everything I prepare is keto or not these days. This gives you the whole birthday cake experience without the sugar, and it’s fantastic!”

Do you prefer cocoa? Instead, try this chocolate celebration cake.
