Step 3: Season with salt, browning sauce, onion, scallion, thyme, scotch bonnet pepper, and garlic, if using chicken or all-purpose seasoning. Allow the chicken to marinade for at least an hour.
Step 4: In a saucepan, heat approximately half a cup of oil. Remove the chicken and spices from the poultry and put the pieces in the saucepan to cook.
Step 5: Fry the chicken for three to five minutes, checking for browning on both sides.
Step 6: Pour off all but a tablespoon of the oil, leaving approximately a tablespoon in the saucepan. Season with salt and pepper, then sauté for three minutes with the carrot, tomato, and bell peppers.
Step 7: Place the chicken in the pot with just enough water to cover it. Cook for approximately 20 to 30 minutes with the lid on.

- 1 medium sliced onion
- 4 garlic cloves, smashed
- 12 chopped bell pepper
- 1 finely sliced medium carrot
- 1 medium chopped tomato
- 3 scallion stalks, chopped
- 12 Scotch Bonnet Peppers, finely chopped
- 3 thyme sprigs
- 1 tsp chicken seasoning or all-purpose seasoning
- 1 teaspoon of salt
- 2 garlic cloves** (optional)
- 1 tablespoon of browning
- a quarter cup of ketchup
- 14 cup of oil
- 2 c. liquid
- 1 lime (or lemon)

Remove the skin and fat from the chicken and wash it in lime/lemon juice water.

Remove as much extra water from the chicken as possible before chopping it into tiny pieces.

Add the onion, garlic, scallion, Scotch Bonnet Pepper, thyme, cloves, all-purpose or chicken spice, half a teaspoon of salt, and the browning to the pan. All of the ingredients should be rubbed into the chicken. Allow the chicken to marinate for approximately an hour once it has been thoroughly covered with spice.

In a frying pan, heat just enough cooking oil to cover the chicken pieces halfway.

As much as possible, remove the onion, garlic, thyme, pepper, scallion, and clover from the chicken. Fry the chicken pieces for no more than 5 minutes in the heated oil. Ensure that all sides have been fried.

Remove all except 1 tablespoon of the cooking oil from the pan and keep it on medium heat. Remove the marinade from the chicken and add it.

Sauté for three minutes after adding the carrot, bell pepper, and tomato.

Cook until the ketchup and 2 glasses of water start to bubble, then add the chicken.

Stir in the other ingredients, cover, and simmer for another 25 to 30 minutes.
