Lemon Zucchini Cookies Ingredients
flour (two cups)
1 tblsp baking soda
a half teaspoon of fine sea salt
3/4 cup softened butter (at room temperature)
a quarter cup of sugar
1 egg
1 tblsp lemon juice 1 tblsp lemon juice
1 cup peeled and grated zucchini
Glaze:
1 cup sugar (powdered)
1 and a half teaspoons of lemon juice
1 teaspoon lemon zest
Lemon Zucchini Cookies Recipe
Preheat the oven to 375 degrees Fahrenheit.
Combine flour, baking powder, and salt in a medium mixing basin. Remove from the equation.
Cream butter and sugar together in a large mixing basin for approximately 2-3 minutes. Beat in the egg and lemon zest for another 2-3 minutes.
Slowly whisk in the flour mixture until well mixed, then fold in the zucchini. On a greased cookie sheet, drop by rounded tablespoonfuls. Bake for 10-12 minutes, or until the tops and sides are gently browned.
Combine the glaze ingredients in a small dish and pour over the cookies after they have partly cooled.
