Chocolate chip cookies are one of my favorites. I make a lot of different sweets, but my personal favorite is simply plain chocolate chip cookies. Of course, hot and fresh from the oven! I’d never used rice krispies in my chocolate chip cookies before, but I saw another cookie recipe that called for them and decided to give it a try.
The rice krispies don’t alter the taste at all, but they do give an amazing crunchiness to the dish. These cookies have a great consistency. The cookies are very soft, which is just how I like them, but the cereal adds a nice crispiness.
These cookies also include oats, which I like since they provide a variety of textures in a cookie (between the oats and the rice krispies). I guarantee you’ll like them as much as I do!
Rice Krispie Chocolate Chip Cookies Ingredients
1 cup softened butter (at room temperature)
1 pound of brown sugar
1 pound of sugar
2 tsp vanilla extract
2 eggs
flour (two cups)
1 tblsp baking soda
1 teaspoon of baking soda
2 cups oats, rolled
rice krispie cereal, 2 cups
a cup or two of semi-sweet chocolate chips
How to Make Chocolate Chip Rice Krispie Cookies
Preheat the oven to 350 degrees Fahrenheit.
Set aside a bowl containing the flour, baking powder, and baking soda. With an electric mixer, beat together the butter, brown sugar, and sugar in a separate dish for approximately 2-3 minutes.
Mix in the eggs and vanilla extract for another 2 minutes.
Add the flour mixture and stir just until everything is combined. With a big spoon, combine the oats, cereal, and chocolate chips.
Scoop the dough onto a cookie sheet that has been prepared using a cookie scoop. Bake for 9-10 minutes, or until light golden brown around the edges.
