  • 1 medium green bell pepper, seeded and thinly sliced

  • 4 whole-wheat hamburger buns or 4 sprouted-grain hamburger buns
  • 34 cup beef broth (low-fat, low-sodium)
  • 34 cup chicken broth (low-fat, low-sodium)
  • 8 oz. lean roast beef, sliced (from the deli counter)
  • 6 slices reduced-fat milk cheese (2% fat)
  • 6 tablespoons ketchup (low-sugar)

  • Over medium-high heat, heat a large nonstick saut pan. Spray the pan with cooking spray and add the onion and pepper once it is heated. Season with salt and pepper to taste, cover, and simmer, turning periodically, for approximately 12 minutes, or until the veggies have softened.
  • In the meanwhile, preheat a grill pan to high heat. Split the buns in half and put them cut side down on the pan once it is heated. Allow 1 to 2 minutes for the buns to brown slightly. Set the buns aside after removing them from the grill pan.
  • In a medium saut pan, combine the beef broth, chicken broth, and sliced roast beef, using a fork to separate the roast beef pieces. Warm the beef gradually in the broth over medium heat until it is hot but not boiling. Drain the meat and set aside the liquid.
  • Distribute the meat among the toasted buns’ bottom halves. 12 pieces of cheese should be placed on top of each sandwich. The cheese should be topped with the hot onion-pepper combination, followed by the ketchup. Sandwiches should be closed with the bread tops and served with the heated broth for dipping.
