  • cayenne pepper (12 teaspoon)
  • 12 teaspoon garlic powder, ground
  • 12 tbsp. paprika
  • 12 teaspoons cayenne pepper
  • For frying, oil

Instructions

  1. Trim the gizzards of any extra fat or gristle.
  2. On both sides, season with salt and pepper.
  3. Add hot sauce buttermilk to a plastic storage bag and mix to blend. Add the gizzards to the bag and set aside for 1-2 hours to marinade.
  4. Whisk together seasoned salt, flour, black pepper, cayenne pepper, and garlic powder in a big bag.
  5. Mix flour, salt, cayenne pepper, pepper, garlic powder, and paprika in a separate plastic storage bag until well mixed.
  6. Place the marinated gizzards (a couple at a time) in a seasoned flour bag and shake to evenly coat before placing them on a parchment-lined baking sheet. Refrigerate for 20 minutes to allow the flour to firm.
  7. Preheat a pan or deep fryer at 375 degrees F (190 degrees C), pour in the oil, and cook until golden brown.

  • 1 pound gizzards of chicken
  • 4 bacon slices
  • 1 gallon of chicken broth
  • 2 peeled and sliced carrots
  • 1 minced small onion
  • 4 celery stalks, minced
  • 2 teaspoons oregano (dried)
  • 1 teaspoon thyme, dry
  • 1 seeded and minced poblano pepper
  • 6 garlic cloves, minced
  • 2 teaspoons red chili pepper, crushed
  • 1 1/2 cups finely chopped tomatoes, canned or fresh
  • 1/2 gallon red wine
  • 1 tablespoon white vinegar
  • 4-6 bay leaves, dried
  • worcestershire sauce, 2 tblsp
  • garnish with parsley sprigs

Instructions

  1. Chop each gizzard into four pieces one at a time. Repeat with the remaining pieces and put aside.
  2. Cook the bacon pieces in a large Dutch oven over medium heat until the fat has drained out. Take them out and put them aside.
  3. Sauté the onion in the bacon grease for approximately 8 minutes, or until it begins to become golden brown. Increase the heat to medium-high and stir in the carrots, celery, pepper, and garlic. Add the thyme, oregano, and red chili flakes after 2 minutes of cooking.
  4. Stir in the tomatoes and let them to color slightly for about a minute before scraping the bottom and reserving them. Rep this process 3–4 times more.
  5. In a large mixing bowl, combine the wine, vinegar, chicken broth, Worcestershire sauce, and bay leaves. Add gizzards to the mix. Bring the water to a boil. If you hard boil your gizzards, they will become tough.
  6. Reduce heat to low, cover, and cook for 2-1/2-3 hours, or until meat is very soft, stirring periodically.
  7. Serve the stew with parsley and crumbled bacon over a bed of simple white rice.
