Last night, I ate a shrimp wonton guacamole cup from Tintorera in SF. It was really good! The wonton was crispy, the shrimp was sweet and spicy, and the guac was perfectly creamy and smooth.

What’s the secret to creating the perfect guacamole? For the most amazing Guacamole, it begins with the best Avocados. Avocados are to guacamole what olive oil is to aioli.

I love making tacos, but I find that the traditional tortillas are so bulky and take up so much space. I’ve recently gotten an obsession with wonton wrappers (or egg roll wrappers). They make amazing little taco shells that are so much fun to eat. They’re so versatile and can be filled with all kinds of ingredients. So here’s a recipe for wonton tacos.

You can see it here if you haven’t already. Being on TV was both thrilling and nerve-wracking, but I’m grateful for the chance to get greater exposure for my site. Video and television are on a whole other level than writing and photography, but I want to start making videos for my site in the near future. Speaking of recipe videos, I had been seeing a few videos with these wonton guacamole cups with shrimp, and decided to try it out and put my own spin on it. The combination of the Thai sweet chili shrimp, creamy guacamole, and crispy wonton, was the perfect bite! I was so thrilled how good this recipe turned out and it’s a perfect party bite or appetizer for your family dinner. The best part was that it only took about 20 minutes to make from start to finish!Mini wonton cups filled with guacamole and topped with Thai Sweet Chili Shrimp.Typically when I bake Wonton Cups I use a regular size muffin tin, but for these I used a mini muffin tin and they turned out so nice and crispy. Then I filled them with an easy Guacamole using avocado, diced tomato, fresh lime, salt and pepper. For the Shrimp, I used raw shrimp that was already peeled and I cooked them in some oil on a skillet. Then I added a few tablespoons of store bought Thai Sweet Chili sauce and coated the shrimp and allow the sauce to thicken for a minute or two. To assemble, place a teaspoon of the guacamole into the wonton cup and top with a shrimp. The guacamole and shrimp already have so much flavor that a dipping sauce is not needed.  Serious flavor bomb right here!

Thai Sweet Chili Shrimp Wonton Guacamole Cups

Guacamole cups with sweet chili shrimp are a fun party snack that everyone will like.

Instructions 

Wontons:

  • Preheat the oven to 350 degrees Fahrenheit and grease a small muffin pan.

  • To create a level bottom, gently place Wonton wrapper into muffin pan, pushing and folding the edges. Cook for 10 minutes, or until lightly browned, spraying each wonton with cooking spray.

Guacamole:

  • 1 ripe avocado and 1 diced Roma tomato, mashed with a fork To keep the Guacamole from becoming too watery, I like to remove the seeds. Squeeze half a lime and season with salt and pepper to taste.

Shrimp:

  • Shrimp should be peeled and deveined before being dried with paper towels. Salt & pepper to taste. Place oil in a skillet over medium heat. Cook for approximately a minute on each side or until shrimp becomes pale pink in a heated skillet. I fried 6 at a time in a smaller skillet. Just make sure the skillet isn’t too full.

  • If you’re cooking in batches, combine the shrimp with the rest of the cooked shrimp and stir in the Sweet Chili sauce. I used around 3 tbsp, but you may need more or less depending on the size of your pan. You’ll need enough sauce to cover the bottom of the pan. Allow for a minute for the sweet chili sauce to heat up, then turn the shrimp and cook for another minute. Transfer to a plate.
