Whiskey Glaze for Crispy Chicken Wings: What do you do when you want to make your favorite barbeque chicken wings crispy and tasty? You toss them in a whiskey glaze. The purpose behind this glaze is to impart a very nice, delicious and crunchy coating to the chicken breasts or wings without them looking too dry and looking blah. It is a leaner alternative to other glazes you can possibly think of.
Here’s the first time I’ve tried to use a chicken wing glaze or sauce that is not for wings for some reason. I was adding the glaze to the wings, but not letting it simmer long enough to have a good thick sauce.
I use a recipe that I found on a food blog called “tintorera”. It is a very simple and quick recipe.
Crispy Chicken Wings with Whiskey Glaze
This whiskey glaze may be used over crispy chicken wings, as a stir fry sauce, or as a topping for steamed rice or veggies.
Ingredients
- 6 garlic cloves (minced)
- 1 teaspoon of oil (canola or vegetable)
- 1/2 cup bourbon
- 1 pound of brown sugar
- a quarter cup of pineapple juice
- 1 cup of water
- a quarter cup of soy sauce (I recommend Kikkoman — I think it has the best flavor)
- cornstarch, 1 tblsp (diluted with 2 Tablespoons water)
- 2 tblsp ginger, minced
- cayenne pepper, 1/2 teaspoon

This sauce is even used on pulled pork by Dan at Mantitlement. Ooooooh! This recipe yields a substantial quantity of sauce. If you have any leftovers, follow Dan’s suggestion and keep them in the fridge to pour over grilled chicken or steak. Don’t stop there, however! This whiskey glaze is delicious over steamed rice or vegetables, as well as in stir fries!

In a small skillet, heat the oil and quickly sauté the garlic (about 30 seconds). It’s important not to burn the garlic since it’ll become bitter.
Allow for 2 minutes of cooking time after adding the whiskey. Brown sugar, pineapple juice, water, and soy sauce are added to the pan. Cook for 10 minutes on low heat. Stir a little of the heated sauce into the cornstarch mixture to temper it. Allow the glaze to thicken slightly by whisking in the tempered cornstarch mixture to the pot. Bring to a boil, then simmer for an additional 10 minutes. Remove the pan from the heat and stir in the ginger and cayenne pepper. Serve Crispy Chicken Wings with this sauce. |
