Tom Yum Goong is the king of Thai spicy and sour soups, and there is no better way to enjoy it than to make it at home. Preparing this soup is an easy task, requiring only five ingredients. I recommend that you cook it on the stovetop instead of a wok, as the smaller surface area of the wok will produce a much more intense flavor.

I know I’ve mentioned it before, but food is medicine, and fresh herbs may help you feel better when you’re ill. My children like Tom Yum, but without the chili peppers. I take some soup out of the pot and season it with the spices for my husband and myself.
Here’s how to make Tom Yum Goong at home, according to my notes. If you’re not acquainted with Asian cuisine, the ingredient list may seem daunting, but if your city has an Asian grocery shop, you should be able to get everything there. You’ll also note that my broth is transparent rather than crimson, like it is in most places. A Roasted Chili Paste provides the red oily color. This is optional, but I like to use fresh bird’s eye chilis. To keep the shrimp from becoming rubbery, add it to the soup after the stock is finished, and keep it at a low boil until ready to serve. If you wish to preserve any Tom Yum for another time, just add the shrimp when you reheat it.

Salt, Onion, Lemongrass, Galanga, Lime Leaves, Cilantro Stems (knot it up to make it simpler to remove when the soup is done), Chili’s, and Tomatoes go into a medium saucepan with water.

To create the broth, bring to a boil and then reduce to a low heat for approximately 5 minutes.

After that, add the Mushrooms, Fish Sauce, and Lime Juice, and season to taste.

Remove the Cilantro stems and Galanga pieces from the pan and reduce the heat to medium low.

Make sure the stock isn’t boiling before adding the shrimp. Turn off the heat after a minute of gentle stirring. The soup is ready to serve after the shrimp are pink. Cilantro leaves may be used as a garnish. Serve with rice as a main meal or as an appetizer before a main dinner.
Notes
You may leave out the galaga root if you don’t have any. Lime peel may be used as a substitute for lime leaves.
