Thai Basil Chicken Fried Rice | By David Chang (of Momofuku fame) The color of his father’s eyes was a golden-green. The fragrance of his cologne was a sharp citrusy scent. And the way he held his body, with its long powerful arms and big hands, was a style all his own.

New recipe, new love. This is a really comforting dish, and I’m in love with it. It’s easy to cook and tastes even better than it looks. It’s full of protein from the chicken, and it has the perfect blend of saltiness, sweetness, and spice from the sauce. I have tried many different types of fried rice, but this one has become my favorite.

Thai Basil Chicken Fried Rice Recipe –

1 cup Mahatma Jasmine Rice, cooked according to package directions and set aside to cool. This is best done the day ahead and refrigerated. However, I’ve also been in a hurry and completed it the same day. Allow rice to chill uncovered after cooking if prepared the same day. 

Prior to cooking, prepare all of your ingredients and have them ready. Because stir fry dishes are prepared fast, this is always the norm.

2 tablespoons oil, heated in a large skillet or wok over medium heat Stir in the garlic and chopped jalapeo for a few seconds to unleash their flavors. To make the jalapeo less spicy, remove the seeds.

Increase the heat to high and stir in the ground chicken, breaking it up with a spatula.

Stir in the soy sauce and fish sauce after the ground chicken is approximately halfway done. Coconut aminos or tamari may be used in place of soy sauce if you require a gluten-free alternative.

When the chicken is done, add the chopped onion and bell pepper, stir to combine, and simmer for a minute to soften.

Then, reduce the heat to medium and add the washed basil leaves. Now add the cooked and cooled Mahatma Rice. Stir thoroughly, then test for flavor, adding more soy sauce or fish sauce if necessary.

Spicy basil meals in Thailand are often served with a fried egg (kai dao) on top to help temper the heat. To prepare a Thai-style fried egg, heat oil in a nonstick pan or a clean wok until it is hot. After that, gently put the egg in the oil while avoiding splattering oneself.

Serve with additional basil leaves, sliced cucumbers, and a fried egg on top of the Thai Basil Chicken Fried Rice.

Thai Basil Chicken Fried Rice is a hearty meal with a strong taste profile. It reminds me of my youth, when my mother would cook fried rice when she was in a hurry or wanted to use up protein and vegetables. If you have any extra vegetables on hand, you may throw them in for a nutritional boost.

Instructions 

  • In a small saucepan, cook 1 cup MahatmaTM Rice according to package instructions. Allow to cool completely before placing in the refrigerator.

  • 2 tablespoons oil, heated in a large skillet or wok over medium heat Stir in the garlic and chopped jalapeo for a few seconds to unleash their flavors. To make the jalapeo less spicy, remove the seeds.

  • Increase the heat to high and stir in the ground chicken, breaking it up with a spatula.

  • Then, reduce the heat to medium and add the washed basil leaves. Now add the cooked and cooled Mahatma Rice. Stir thoroughly, then test for flavor, adding more soy sauce or fish sauce if necessary.

  • Serve with additional basil leaves, sliced cucumbers, and a fried egg on top of the Thai Basil Chicken Fried Rice.
