To begin, prepare the sweet potato “toasts” as follows: Preheat the oven to 400 degrees Fahrenheit (200 degrees Celsius). Cut sweet potato into uniform, lengthwise slices that are approximately 1/4 inch thick with a very sharp knife. (Each big sweet potato yields about 4 to 6 slices.) Toss the slices with olive oil in a basin. Arrange slices on a baking sheet lined with parchment paper, being careful not to overcrowd them. Bake for 15 minutes on the tray, then remove from the oven, turn the slices, and bake for another 10 minutes.
After the “toasts” have been cooked, top them with any toppings you like.

Ricotta & Smoked Salmon: Spread the sweet potato slice with ricotta cheese, then layer it with smoked salmon, and thinly sliced onions. Sprinkle with capers, then drizzle with olive oil. Add salt and pepper to taste.

Smashed Avocado & Poached Egg: Smash up 1/2 a ripe avocado and a pinch of sea salt per slice. Layer with sliced tomatoes. Poach an egg by bringing a saucepan of water to a simmer, then carefully releasing a cracked egg into the water. Simmer the egg untouched for about 4 minutes (for a runny yolk). Remove the poached egg with a slotted spoon, then place on top of the slice. Sprinkle with fresh microgreens or chopped herbs, and salt and red chile flakes to taste.

Chocolate Almond Spread with Berries: To make the chocolate almond spread, combine almond butter, maple syrup, cacao powder, and salt in a mixing dish. Top a sweet potato slice with a piece of this mixture, then fresh berries and chopped almonds. If desired, drizzle with more almond butter.
Cooked sweet potato slices may be kept in an airtight container for up to 4 days in the refrigerator. Sweet potato slices may be toasted in the toaster to reheat. Simply turn the toaster to high, insert the slice, and toast as you would bread. Serve with your favorite toppings when the sweet potato “toast” bursts!
