Pineapple chicken is my favorite type of chicken, and I love a good crock pot recipe, so I combined my two favorite things for this delicious recipe. You can’t go wrong with a simple crock pot recipe like this one, and it tastes delicious.

It’s summertime and we can’t think of anything better than ripe, juicy summertime fruits to come home to. But how can we enjoy the fruits of the season without the hassle of turning on the oven? Well, we have the perfect solution for you, it’s the crockpot! Using a slow cooker is the best way to ensure that you get that succulent, juicy taste of fresh pineapple into your mouth every night no matter what time of the year it is! A little bit of history: my grandma has always been a huge fan of pineapple chicken, but her standard recipe uses a lot of sugar, and the end result is often less than satisfying. For that reason, when I made it for her last year, I decided to try making a healthier version with less sugar, and a lot more pineapple.   1. Using baking spray, lightly coat your slow cooker.
  2. Arrange the thighs on top in a single layer.
  3. Drain the pineapple juice from the can into a mixing dish, then whisk in the cornstarch until smooth.
  4. Garlic, ginger, soy sauce, sesame oil, red pepper flakes, and black pepper are all added at this point.
  5. Pour everything over the chicken. Combine the red pepper and pineapple pieces in a mixing bowl.
  6. Cook until cooked through on HIGH for 1 1/2 – 2 hours or LOW for 4-5 hours, covered.
  7. Place the chicken and vegetable combination on a dish and set aside.
  8. In a small saucepan, drain the sauce and cook on high for 4-5 minutes, stirring regularly, until the sauce has been reduced by half.
  9. Return the sauce, along with the chicken and vegetable combination, to the slow cooker. Stir in the green onion and water chestnuts until everything is thoroughly mixed.
  10. Serve with brown rice, cauliflower rice, or quinoa while it’s still hot.
