- Using baking spray, lightly coat your slow cooker.
- Arrange the thighs on top in a single layer.
- Drain the pineapple juice from the can into a mixing dish, then whisk in the cornstarch until smooth.
- Garlic, ginger, soy sauce, sesame oil, red pepper flakes, and black pepper are all added at this point.
- Pour everything over the chicken. Combine the red pepper and pineapple pieces in a mixing bowl.
- Cook until cooked through on HIGH for 1 1/2 – 2 hours or LOW for 4-5 hours, covered.
- Place the chicken and vegetable combination on a dish and set aside.
- In a small saucepan, drain the sauce and cook on high for 4-5 minutes, stirring regularly, until the sauce has been reduced by half.
- Return the sauce, along with the chicken and vegetable combination, to the slow cooker. Stir in the green onion and water chestnuts until everything is thoroughly mixed.
- Serve with brown rice, cauliflower rice, or quinoa while it’s still hot.
