This low-carb Jalapeno Popper Chicken Skillet recipe is a perfect weeknight dinner packed with flavor. The chicken is shredded and breaded with a spicy jalapeno breading, then topped with cheese slices and baked. This skillet dinner is a great choice for busy weeknights!

The low carb diet craze has been making waves in the fitness community for the past decade. But, while it’s no secret that low carb diets can help you lose weight and improve your health, it’s not clear to everyone what the benefits are and how to make the diet work for you. Kristy told me she was looking for low-carb snacks and supper options that didn’t take a long time to prepare… and didn’t involve cauliflower or shrimp.

This is an understandable request.

Kristy just began a new career, in addition to being the mother of an active 3-year-old, the wife of a military guy, and the doggy mommy of a massive, loving Golden Retriever.

When it comes to putting supper on the table, she doesn’t have the luxury of time, thus

Accepted the challenge!

I began by putting a recipe from Aunt Bee’s Recipes to the test. It was wonderful, but I had to make a few of adjustments – fresh jalapenos made all the difference.

I also altered the way the chicken was cooked.

This is low-carb comfort cuisine at its finest! It also doesn’t take long to prepare!

 

One of the added advantages is that while it’s baking, I can clean up the kitchen, arrange the table, etc.

…and pour yourself a glass of wine.

If you’re cooking for someone who doesn’t appreciate the low-carb nature of this meal, scatter a handful of tortilla chips on top.

The issue has been resolved!

I’m loving Polish pottery at the moment. Low-carb Eggplant Parmesan is a great choice. Serve yourself another piece instead of the side of bread – it’s that delicious!

This Grilled Marinated Flank Steak is also a good option. It’s very simple!

Chicken Skillet with Jalapeno Poppers (Low Carb)

Low Carb Jalapeno Popper Chicken Skillet

Serves 4-6

This low-carb chicken skillet with jalapeño poppers is simple and quick to prepare. Multi-task by cooking bacon, sautéing chicken, then baking the whole prepared meal in one ovenproof pan for simple cleanup. Low-carb has never tasted so delicious!

Ingredients

  • 5 bacon slices, crisped and diced
  • 4-6 boneless chicken breasts, skinned and defatted (If thick, flatten a bit with mallet)
  • 1-2 tablespoons extra virgin olive oil
  • 8 oz. softened cream cheese package
  • 1/4 cup mayonnaise
  • a quarter teaspoon of garlic powder
  • 1 cup cheddar cheese, shredded
  • 1/4 cup parmesan cheese, grated
  • 4-6 finely sliced fresh jalapeño peppers (seeds and ribs removed)
  • garnish with cilantro sprigs

Note

To fit our preferences and cooking method, I’ve made a few modifications. Using a cast iron pan to fry the bacon, chicken, sauté the jalapenos, and then heat the whole prepared meal simplifies cleanup. I even serve it in a cast iron skillet at the table. Easy!

Directions

Step 1
Preheat the oven to 350 degrees Fahrenheit.

Cook the bacon until it is crispy, then put it aside.

Season chicken breasts with salt and pepper, then cook over medium-high heat in the same pan as the bacon (removing all but 1 tablespoon of fat) or in a separate skillet with approximately a tablespoon of olive oil.

Cook each side for 3-4 minutes, or until juices run clear, depending on the size of the breasts.

Remove the seeds and ribs from the jalapenos while the chicken is cooking. Finely chop the peppers.

When the chicken is done, transfer it to a dish and put it aside.

Add the chopped jalapenos to the pan and cook for a few minutes. Turn the heat off.

Combine cream cheese, mayonnaise, a pinch of salt & pepper, and garlic powder in a medium mixing bowl.

Add cheddar and parmesan cheeses, sautéed jalapenos, and crumbled bacon (I save a bit for topping before baking).

Return the chicken to the skillet (or other ovenproof dish), cover with the cream cheese mixture, and top with a bit more cheddar and parmesan cheese if preferred.

Preheat the oven to 350°F (about 20 minutes).
