Low Carb Creamy Shrimp Scampi

My favourite dish to make in the summer is scampi. It is such a quick and easy meal to make, and yet it is delicious. In this recipe, I use the Scampi prepared in the oven, but the scampi which you buy in the supermarket is similar enough to the one prepared in the oven. I use cream to give the dish a rich flavour, but you can use milk instead if you wish. I also serve this with a green salad, but you can serve it on the side without the salad if you wish. It is a great dish to make for a special occasion, as it takes only a few minutes to prepare.

Shrimp is a delicious food that is often over looked by many people. The reason for this is shrimps are high in carbs, but low in fats. But that doesn’t mean that shrimp is off limits for everyone. Shrimp is a wonderful addition to the low carb diet. It is fairly low in calories, but high in protein. It is also very good for you. It contains a large amount of high quality protein, so it makes a great snack to have throughout the day. Shrimp also contains a number of vitamins and minerals that are great for the body.

One of the best ways to get healthy is by cooking food the right way. Sometimes, we just want a quick and easy meal. But if you’re going to make the effort to cook, then you might as well make it a bit more interesting, right? So this week, I decided to make something better than just plain cream-based shrimp scampi. Instead, I experimented a bit, and came up with a low carb creamy shrimp scampi recipe.

Because you never know what goes into your food when you dine out, we’ve created an at-home version that you can make in no time to relive those endless seafood eating days!

I’ve been overdosing on shrimp lately, flavoring it with curry powder and lime juice, experimenting with Asian tastes like coconut aminos, rice wine vinegar, and sesame oil, or sticking to the tried-and-true blackened method!

So, What Food Pairs Well With Shrimp?

If you search the internet for shrimp scampi recipes, you’ll find a plethora of options, and although you may have been taught that shellfish and cheese don’t go well, you’d be incorrect! The ideal topping for the creamy, buttery shrimp is grated parmesan, which goes well with our red lobster cheddar biscuit version! Even if you aren’t a big fan of seafood, you may use the creamy, buttery sauce to top your steak or chicken. This low-carb creamy shrimp scampi will please your taste buds regardless of how you prepare it!

Creamy Shrimp Scampi

Tender shrimp sautéed in a garlic and parmesan butter sauce.

Time to prepare: 12 minutes

Instructions:

  • Preheat the oven to 350 degrees Fahrenheit.

  • Add the butter and minced garlic to a pot and cook until the garlic is fragrant.

  • Using a spoon, mix the wine or broth in the pot.

  • In a baking dish, place the shrimp. Pour the butter mixture over the shrimp and sprinkle the parmesan cheese on top.

  • Preheat oven to 350°F and bake for 10 to 12 minutes. When the shrimp has gone pink, take them out of the oven.

  • Serve immediately with fresh parsley as a garnish. Enjoy!
