The Laba Stuffed Ribs recipe is a popular meat dish in Antalya. Cooking, also known as rib filling, is a little tough to prepare at home, but it is well worth the effort. If you wish to make Turkish laba stuffed ribs, the ingredients and procedures are listed below.
To make laba, you’ll need the following ingredients (stuffed ribs)
- 1 rib of sheep or goat (half of the animal hitting the abdominal cavity)
- 1 cup extra virgin olive oil

- a pound of liver
- kidney 1 pc
- Ground beef (500 grams)
- 2 quarts rice
- 1 onion
- 1 c. peanut butter
- 1 cup currant coffee
- 1 cup almonds, toasted
- 1 teaspoon cayenne pepper
- parsley, half a bunch
- 2 tablespoons of butter
- salt (1 tablespoon)
How do you make Laba (stuffed ribs)?
1-Cook the rice in a pot of boiling water for 20-25 minutes.
2-Cut the liver and kidney into tiny cubes using a sharp knife.
3-Chop the onion and sauté it in the oil until it becomes pink.
4-Roast the liver, kidney, and chopped meat until the flesh changes color.
5-After sifting and cleaning the rice, place it in the lungs.
6-Fry for another 5 minutes with the peanuts and currants.
7-In a mortar, coarsely chop the parsley and season with salt and pepper. Remove from the heat.
8-Cut the rib open like a sack with care.
9-Sew the lips with a needle thread after filling the rice mortar into the rib without pressing it.
10-Cut air out of the fleshy parts of the ribs 5-6 with a knife and open the air hole.
11-In a saucepan big enough to accommodate the rib, pour 1 cup of olive oil.
12-Heat the oil and cook the ribs on both sides.
13-Add enough water to cover half of the meat in the saucepan, bring to a boil for 3-5 minutes, and then cut the bottom.
14-Cook for 2.5-3 hours in this manner, or until the meat is soft.
15-Cook the rice mortar in the same way you would rice, with the addition of boiling water.
16-When the meat is done, arrange the filled ribs on top of the pilaf and serve immediately.
