Khmer Krom Peanut Sauce

When I was taking a trip to Cambodia, I realized that they have a peanut sauce that’s like a peanut paste, which is usually served with fried rice. But, when I was there, they added shredded peanuts into it, which surprised me because I thought the peanut sauce was only for the peanut sauce, but when I arrived!

Khmer Krom (or Krom Peanut Sauce) is a famous Cambodian peanut sauce that’s used to serve up a variety of dishes, from curries and salads to stir-fries and pastas. While the sauce is typically made with ground peanuts, a few Vietnamese cooks have recently claimed to have simplified the recipe by, well, using peanut butter. While they’ve been stirring in a bit of flour, salt, and vinegar, the new versions seem to be missing something: the peanut flavor.

Khmer Krom Peanut Sauce is a staple in Cambodian cuisine and it is a sweet and spicy peanut sauce that is traditionally used on taro leaves. Khmer Krom Peanut Sauce is a mixture of peanuts, sugar, salt, and coconut milk, all mixed together. The sweet and spicy sauce is traditionally used on taro leaves, which is a leaf vegetable that is used as a main ingredient in Khmer cuisine. The sauce is also traditionally used to flavor soups, salads and on rice.

Khmer Krom Peanut Sauce

Ingredients

1/4 cup coconut milk from Chau Doc    
1 quart of water    
2 tablespoons creamy peanut butter or 1/4 cup freshly ground roasted, unsalted peanuts    
1/2 teaspoon lime juice, freshly squeezed    
a quarter teaspoon curry powder    
1/4 teaspoon paprika or chili pepper    
2 tablespoons sugar (palm)    
a quarter teaspoon of salt    

Making Khmer Krom Peanut Sauce: Step-by-Step Instructions

  1. In a small sauce pan, combine the coconut milk and water and heat until the sauce is boiling.
  2. Stir in the peanuts, lime juice, curry powder, pepper, palm sugar, and salt, and continue to cook until the sauce is boiling. Remove from the heat and put aside to cool before serving.

I have been searching for a good Khmer peanut sauce recipe for a while now, and wasn’t really impressed with what I found on the internet. It was filled with the peanuts, garlic, krachuyuu [sp] and lime juice, I was expecting something more creamy but since the ingredients were all used properly, it was more like a sort of sauce.
