Chicken Thighs with Roasted Red Peppers

Preheat the oven to 350°F and a large skillet over medium-high heat.
Season the thighs with salt and pepper in a large mixing basin.
Place the thighs in the heated skillet and drizzle with coconut oil. Cook each side for 4-5 minutes.
Make the sauce while the chicken is cooking. In a blender, purée the roasted red peppers, garlic cloves, and olive oil until smooth.
Blend the sauce one more with heavy cream.
Remove the thighs from the fire after they’ve cooked through most of the way and pour the sauce over them. To thoroughly cover the thighs, turn them over if desired.
