Chicken Thighs with Roasted Red Peppers

  • Preheat the oven to 350°F and a large skillet over medium-high heat.

  • Season the thighs with salt and pepper in a large mixing basin. 

  • Place the thighs in the heated skillet and drizzle with coconut oil. Cook each side for 4-5 minutes.

  • Make the sauce while the chicken is cooking. In a blender, purée the roasted red peppers, garlic cloves, and olive oil until smooth. 

  • Blend the sauce one more with heavy cream.

  • Remove the thighs from the fire after they’ve cooked through most of the way and pour the sauce over them. To thoroughly cover the thighs, turn them over if desired.

  • Place the thighs in the oven for 10-12 minutes with goat cheese crumbled on top.

  • Serve immediately with fresh parsley as a garnish!

  • It’s best to keep it in the fridge for up to 5 days in an airtight container.
