For all the health benefits of a keto diet, the most obvious is the ketosis itself. The keto diet is a low carb diet, where the carb intake is kept to less than 50 grams per day. By eating a low carb diet, you’ll have a state of ketosis which is known to burn more fat and used for weight loss. Skinny Keto Cheesecake is the perfect keto dessert. The cheesecake is lightly sweetened with a hint of lemon zest, then layered with a creamy cashew crust. The sweet and sour taste of the cheesecake is a nice contrast to the creamy and buttery cashew crust, making this a true keto cheesecake.
I am very excited to share my keto cheesecake recipe with you all. I have been following a ketogenic diet since January this year and I’ve dropped half my body fat and dropped 4 pants sizes. I have also been able to stop taking all my medications, except for cholesterol lowering niacin, which is recommended for all of us.
Cheesecake is one of the most keto-friendly desserts available. When cream cheese, sour cream, and heavy whipping cream are combined, you get the ultimate high fat treat, therefore we couldn’t pass up the opportunity to produce a keto version! Wait a minute, we didn’t just make one, we made three, and this is only the first one! We began with a Cheesecake with Cashews, which was inspired by my mother.
Cashews are my favorite nuts, but having them in the house can be dangerous due to my proclivity to eat 15 servings in one sitting and their higher carb content. My mother, on the other hand, arrived one day with a bag of cashews from the Indian grocery store. Everything from ghee to nuts is significantly less expensive at an Indian supermarket. We couldn’t stop ourselves from eating the nuts, so it was up to us to include a substantial amount of them into a new recipe!
Cheesecake with Cashews
We used a large bag of cashews from my mother and the cheesecake recipe we had in hand to produce the most wonderful dessert we had ever made! The cashews provide the right crunchy base for the rich cheesecake filling. Surprisingly, the cashew crust has a creamy texture and a hint of sweetness that you wouldn’t anticipate. I can’t believe we haven’t used them in desserts before now!
Dessert of Choice
Not only are cashews my favorite nuts, but cheesecake has always been my favorite dessert so you can imagine why I picked this recipe as my favorite of all our recipes. Not to mention, the hardest part about making these is the wait time as they chill, making them incredibly easy to make!We opted to chill them in the freezer instead of the fridge so they set faster and can be eaten faster, but if you have the patience we would recommend the fridge. This might take anywhere from 2-3 hours. However, when storing we definitely suggest the fridge or they will harden to a bone and they will have to thaw hehe.

Combine the cashews, melted butter, and maple syrup in a mixing bowl.

Take the frozen crusts out of the freezer and evenly spread the filling on top.
