When you’re in a rush and need a quick pizza fix, no time to bake? No worries, just grab an ice cube tray and make your own pizza bites!
If you haven’t heard of these “Pizza Bites” by now, you will surely soon. A brilliant idea to make a delicious pizza in a pizza tray! The ice cube tray creates a “crust” that holds the ingredients in the right place, and this is why I think that this is the most ingenious idea of all.
Ice cube tray pizza bites are a fun way to get kids to eat pizza without using a whole pizza box. You can eat these as a snack. They are simple to make. I like to use a pizza tray as well as the ice cube tray. You can also use a normal cookie sheet. This is always a hit when I have to do pizza night.

Pizza Bites on an Ice Cube Tray
INGREDIENTS
12 cup marinara sauce 16 ounces pizza dough, split pesto (1 tablespoon) 3 tbsp. mozzarella cheese, shredded 3 tblsp cheddar cheese, shredded 14 cup pepperoni (chopped), 14 cup onion (chopped), 14 cup bell pepper (chopped), 14 cup mushrooms (chopped), 14 cup tomato (chopped), 14 cup pineapple (chopped). If desired, additional various toppings
Ice cube tray (silicone or hard plastic) is required.
PREPARATION
Preheat the oven to 350 degrees Fahrenheit/180 degrees Celsius. Allow new dough to rest at room temperature for 30 minutes in a lightly oiled, covered basin. Take one half of the dough and spread it out into a rectangle, approximately 1/8 inch thick, on a floured surface. Set aside the other half of the dough and repeat with the other half of the dough. If your ice cube tray is made of hard plastic, lightly grease it. Cover the tray with the dough and push it down into each hole, holding for approximately 5 seconds to ensure the dough expands correctly. If it rips, you may repair any holes with leftover dough. Assemble each bite with one teaspoon of sauce (marinara or pesto, for example), one teaspoon of cheese, and preferred toppings. Cover the prepared bites with the leftover dough and seal with a rolling pin over the ice cube tray. Any leftover dough should be trimmed and saved for future pizza bites. Freeze the ice cube tray for an hour or until the dough has firmed up. To release the bits, flip the tray onto a baking sheet lined with parchment paper. If necessary, carefully loosen with a paring knife. Cut the bites in half and separate them. Preheat the oven to 350°F and bake the dough for 15-20 minutes, or until golden brown. Enjoy while it’s still warm!
