- 1 Roma tomato, peeled and sliced
- 12 oz. chopped white onion
- 1 garlic clove, mashed
- 1 sliced Serrano pepper
- 1 tbsp. roasted sesame seeds
- 2 quarts chicken stock
- Salt
- Pepper
- Canola Oil, 2 tbsp.
- Dark Mole Paste, 4 oz.
- Boneless Chicken Breast, 1 pound
- 12 teaspoon salt
- 12 teaspoon pepper
- Garlic Powder (12 tsp.)
- 12 tablespoons cumin powder
- 14 tablespoons red pepper flakes
- Lime Juice (1 tbsp.)
- To make the sauce, puree the tomatoes, onion, garlic, serranos, sesame seeds, and a cup of chicken stock in a blender until smooth. Salt & pepper to taste.
- In a skillet, heat the oil. Pour in the sauce and cook for 5 minutes on low heat.
- Combine the mole paste and the remaining chicken stock in a mixing bowl. Cooking time is 25 minutes.
- In a mixing bowl, combine salt, pepper, garlic powder, cumin, and chili flakes.
- Season the chicken with the spice mix.
- Cook the chicken for 4-5 minutes each side on the grill.
- Serve the chicken with mole sauce and sesame seeds on top.

Tips for Making Grilled Chicken Mole
Just glancing at the list of ingredients and the lengthy instructions for making the mole sauce takes a long time. However, it is deserving of being made and combined in with the grilled chicken before serving over rice or just pouring the sauce over everything. Then sprinkle sesame seeds on top of the chicken and serve with some vegetables on the side.
