Where have Fluffernutter Cookies been all my life?! Peanut butter cookies are one of my favorites, but oh my goodness. With marshmallow fluff on top, it’s even better! It’s surprising how much a dab of marshmallow crème can do to elevate a basic peanut butter cookie recipe.
This specific peanut butter cookie recipe is also gluten-free, since it does not need the use of flour. Even without flour, the cookies are very soft and cookie-like.
What does it mean to be a “Fluffernutter”?
A sandwich prepared with peanut butter and marshmallow cream between two pieces of bread is known as a fluffernutter. Although I’ve never had one, the combo of peanut butter and marshmallow cream seems more suited to a cookie than a sandwich!
Fluffernutter Cookie Ingredients
Peanut Butter — I like creamy peanut butter (like Jif or Skippy), but crunchy peanut butter is also a good option. I haven’t tried using a more natural peanut butter in this recipe yet, but I haven’t had much luck with that kind of peanut butter in other cookie recipes, so the consistency may differ.
Brown sugar – Make sure the brown sugar is soft and fresh for the finest results.
Salt, baking soda, granulated sugar, egg, vanilla extract, and vanilla extract – Check to see whether the baking soda is old or expired.
Marshmallow Fluff — Another name for Marshmallow Creme.
Fluffernutter Cookies: How to Make Them
Preheat the oven to 350 degrees Fahrenheit. Use a silicone baking mat or parchment paper to line a baking sheet.
In a large mixing basin, combine the peanut butter and sugars. For 2-3 minutes, beat with an electric mixer. Add the egg and vanilla extract and continue to beat for a few minutes longer. Stir in the salt and baking soda until they are well mixed.
Scoop out tablespoonfuls of dough using a cookie scoop and roll them into balls. Place each dough ball on the baking sheet and make an indentation in the center. You may use the back of a tablespoon or your thumb.
Preheat the oven to 350°F and bake the cookies for 10-12 minutes. I like my cookies on the underdone side, so I bake them on the shorter end of the range, but if you like them crispier, you may leave them in for a minute or two longer.
Use a tablespoon to push down the indentation a little further as soon as the cookies come out of the oven, and then let the cookies cool for 2-3 minutes on the baking sheet. Allow the cookies to cool fully on a wire rack.
Place a dollop of marshmallow cream on top of each cookie after it has cooled. Using two spoons is the simplest method to accomplish this. Scoop with one of them, then use the other to push it off the spoon.
