Chicken pho is one of Asia’s most beloved soups, and a dish that is common in Vietnam, where it is called pho. It’s also a dish that can be made with chicken and beef, shrimp, or even vegetables as the meat, but I will be making it with chicken. The soup is also sometimes served as a completely separate dish.
Are you tired of getting sick of the same old chicken noodle soup? Have you tried the instant pot (or crockpot) but still get bored with it? Well, I have a great recipe for you to try. This recipe is so simple yet so delicious!
Have you gotten your hands on an Instant Pot yet? Aside from my Blendtec, which is also fantastic, I don’t believe I’ve ever been more enthusiastic about a device. Everything I used to prepare in the slow cooker can now be made in the Instant Pot in half the time. For example, the stock for this Chicken Pho usually takes hours to boil, but just 20 minutes in the Instant Pot produced a delicious soup.
My children like Pho, a Vietnamese noodle soup that may be prepared with chicken, beef, or seafood. Thai noodle soups are also available, but my kids enjoy the simplicity of pho. I stated in a previous article how much I like utilizing Rotisserie Chicken to save time. This soup can be made using a full chicken, but I love that I was able to prepare it in under an hour using a store-bought rotisserie chicken.
The spices are the secret to making a delicious Pho soup. I use this spice mix, which has all of the pho ingredients in one package so you don’t have to buy them separately. For added flavor, I add carrots, celery, onion, and garlic. When I’ve removed all of the flesh off the rotisserie chicken, I combine the carcass with water, Pho spice mix, and approximately a tablespoon of salt in an instant pot. Cook on high pressure for 20 minutes, making sure the valve is set to seal. Keep in mind that it will take approximately 20 minutes to achieve pressure, so the broth will take around an hour to prepare. Again, this is much superior than simmering for four hours on the stove.
I use these rice stick noodles for the noodles and soak them in warm water for approximately an hour. When ready to serve the soup, put one serving, approximately a big handful of noodles, in a small saucepan of boiling water and cook for about a minute or until soft. Then, in a dish, combine the noodles, hot chicken Pho soup, and rotisserie chicken pieces. Because the noodles will stay together when cooked, you should only boil a serving at a time. If you have any leftovers, keep the drained, pre-soaked noodles in a zip lock bag in the fridge. Serve with fresh basil, mint, lime wedges, and bean sprouts if desired. Bean sprouts are not my favorite vegetable. The flavor of pho soup is mild, so taste it and season with salt, fish sauce, or Hoisin sauce as required. Of course, I prefer mine a little spicy, so I add Sriracha to mine. Enjoy!

Remove the rotisserie chicken’s flesh in its whole. Because my husband prefers white meat and I like dark meat, I keep them separately for the soup. In the instant pot, place the rotisserie chicken carcass. If you’re using a fresh chicken, put the entire bird in the pot, giblets removed, and remove the flesh after it’s done cooking.

Combine the spice package, carrots, celery, onion, and garlic in a large mixing bowl. Fill to the brim with water. Fill your Instant Pot to the line, then add salt. Place the lid on top, secure it, and set the valve to Sealing. Set the timer for 20 minutes on high pressure. It will take around 20 minutes for the pressure to build up.

Soak rice stick noodles in warm water for approximately an hour while the broth cooks.

When the timer goes off, cover the valve with a cloth and quickly release the pressure. (Be careful, there will be a lot of steam.)

Remove the carcass of the chicken as well as all of the aromatics. To achieve a beautiful clear broth, I additionally drain it through a strainer or cheese cloth. To keep the soup heated, return it to the instant pot.

Bring a small saucepan of water to a boil, then add a handful of soaked noodles and simmer for approximately a minute. Remove the noodles from the water using a spider or pasta spoon and put them in a large soup dish. If you’re preparing several bowls, keep the pot of water boiling. Because the noodles will cling together, just boil one serving at a time.

Over the noodles, pour the pho soup and add the chicken chunks. Serve right away with a side of condiments.
