This dip is brought to virtually every event we attend by a close friend of mine. (Hey, Dena.) Because it is THAT delicious, it is always the first appetizer to be devoured. I pleaded with her to give me the recipe, and she eventually agreed! I told her that this was just too wonderful to keep to myself. She gave it her own unique spin, and it never fails to delight the audience. I like how versatile it is: it’s delicious with chips, on top of a bed of lettuce, or just eaten plain with a spoon! This guilt-free treat will definitely become a summer staple!
How long is this slump going to last?
If you don’t finish this dip on the first day, store it in a securely sealed jar in the refrigerator for three to four days. However, it flies by so quickly that we seldom have any leftovers!

Yes! Garbanzo beans, commonly known as chickpeas, offer a wide range of health advantages. First and foremost, one cup of these puppies has 39 grams of protein! The following are the ingredients for our Easy Cowboy Caviar:
- Beans, black
- Beans (Garbanzo)
- Peppers, both red and orange
- Jalapeño
- Corn
- Rotel
- Garlic
- Onion, red
Dressing Sauce:
- Sugar
- vinegar made from rice
- Olive oil is a kind of oil that comes from
- powdered garlic
To create our Easy Cowboy Caviar, follow these steps:
To make this meal, start by mixing together all of the dressing components! In a sauce pan, combine the sugar, rice wine vinegar, olive oil, and garlic powder and bring to a boil. Stir until the sugar is completely dissolved. Allow to cool after removing from the heat. You don’t want to season the salad with a heated dressing.
After that, you should open all of the canned items. Corn, black beans, and garbanzo beans should all be drained and rinsed. Then, in a big mixing basin, combine them. Open the Rotel can (DO NOT DRAIN) and combine with the other ingredients.
Both bell peppers should be chopped into tiny bits. Assemble the red onion and jalapeo in the same way. Combine all of the canned items in a mixing dish. Mix well to include all of the ingredients.
Pour the cooled dressing over the top of the mixture. Mix until everything is well mixed.
You may start serving right now! However, we feel that let the ingredients to rest for approximately an hour improves the taste. The greatest thing about this dip is that it keeps getting better over time!

Ingredients
- 2 tbsp. black beans, rinsed and drained
- Garbanzo Beans (Two Cans)
- 1 Shoepeg Corn Can
- 1 Rotel Can
- 1 diced jalapeo
- 1 chopped red bell pepper
- 1 chopped orange bell pepper
- 1 bunch chopped cilantro
- Sauce:
- 13 cup sugar
- rice vinegar, 1/2 cup
- 1/2 cup extra virgin olive oil
- a half teaspoon of garlic powder
Instructions
- In a sauce pan over medium heat, combine all dressing ingredients. Bring to a boil, stirring constantly, until all of the sugar has dissolved. Allow to cool before serving.
- Both the red and yellow bell peppers should be chopped into tiny bits. Set aside the cilantro and jalapeo to dice. Set aside 1/2 of a red onion, diced into tiny pieces.
- Drain the garbanzo and black beans and combine them in a large mixing dish. Drain the corn and toss it in with the beans.
- Add the Rotel to the bean mixture (do not drain).
- Mix all of the chopped ingredients (bell peppers, jalapeo, onion, and cilantro) well in the clear bowl of beans.
- Pour the chilled dressing over the bean mixture slowly. Completely combine the ingredients.
- Serve immediately or set aside for one hour to marinate.
