I love tacos. If you don’t, well, I’ll just say it: you’re a bad person. I’ve been ordering them from Chipotle since I was in college (and always wish they offered them at my house instead of my college dorm). They’re fast, delicious, and a fun alternative to the boring old burrito. This is my version of an easy chipotle chicken recipe that is just as delicious as the Chipotle version, but slightly healthier.
This recipe is a little different than my normal chicken recipes. It takes a couple of hours to make the chicken, but the results are well worth the wait. The pineapple salsa is made from fresh pineapple, and it is refreshing and tasty. If you don’t have any pineapples, you can substitute with ripe mangoes. It is a simple recipe, but don’t be fooled by the ingredients, the flavor is Fantastic!

Sometimes the simplest recipes are the tastiest, like this Chicken Chipotle, which only just one can of chipotle chiles to amp up the taste! I needed a fast marinade for chicken breast and was inspired by my Chicken Tinga recipe. This marinade may also be used on chicken thighs.
This is your opportunity to try Chipotle peppers in adobo sauce if you’ve never done so before. They go a long way and may be utilized in a number of ways, including this marinade, a chipotle-based sauce, and salsa. You’ll probably not use the whole can, so the rest may be kept in the fridge for a few weeks in an airtight container.
A fresh pineapple salsa complements the chipotle chicken well, adding acidity and brightness to the heat. I used cauliflower rice to make this a low-carb meal, but you can use normal rice, serve with mixed greens, or make a taco out of it! This dish is ideal for meal prep since you can grill a large batch of chicken and the pineapple salsa will keep in the fridge for a few days.

In a small bowl, put the appropriate quantity of chipotle peppers. Break up the pepper with a spoon. In a dish or zip top bag, combine the chicken, chipotles, salt, and oil, and evenly spread the marinade. Refrigerate for at least 30 minutes or up to 24 hours before serving.

Grill the marinated chicken or cook it in a cast iron pan on the stovetop. Cook until the internal temperature reaches 165 degrees Fahrenheit. Remove the chicken from the pan and set it aside to rest for 5 minutes before slicing.
Pineapple Salsa (Fresh Pineapple Salsa)

Remove the pineapple’s ends, then stand up straight and slice away the outer peel. Remove the center corn and cut into tiny pieces. Refrigerate the remaining pineapple, reserving 1 cup for salsa.

Combine diced pineapple, cilantro, red onion, lime juice, and salt in a mixing bowl.
