It is so easy to fall into a vicious cycle of eating junk food. The problem is that junk food is the easiest type of food to eat. Often, it tastes good and you don’t even realize that you are eating junk until it is too late.
For those of you that are not Italian, a casserole is a dish that utilizes ingredients that are prepared in advance. This dish consists of layers of garlic and parmesan cheese and chicken cooked in a creamy and crunchy sauce. This dish is cooked in a slow cooker and once cooked, the layer of cheese becomes like a crust on top of the chicken and sauce.
If you love chicken as much as we do, then you know the only way to eat it is in a delicious and comforting casserole recipe. To make this dish, start by prepping some chicken breasts that are cooked in a delicious marinade. Then bake the chicken breasts in a casserole that is prepared with a creamy chicken sauce. Finally, top the finished dish with your favorite vegetable and serve up some deliciousness.
Every mouthful is creamy, satisfying, and protein-packed. One of my husband’s favorite dishes is this creamy crispy chicken casserole. Every tasty dish has over 16 grams of protein. On hectic weeknights, this comfort meal is a go-to since it’s almost ready-to-eat with just 6 ingredients! What’s even better is that each dish has less than 300 calories! Score!
We’ve prepared a lot of different chicken casseroles throughout the years. Because they are so gosh darn delicious, I’ve always drawn for the heavier, calorie-dense ones. Our aim with this recipe was to create a tasty, hearty casserole that didn’t rely only on cheese and sour cream. In 99 percent of the recipes we’ve tested, Greek yogurt works just as well as sour cream. It adds a creamy smoothness to this meal without the guilt! We serve it with a spinach and walnut salad for a well-balanced and delicious dinner.
Is it necessary to cook the chicken beforehand before placing it in the casserole?
The answer is yes for this particular recipe. You’ll need to cook the chicken before combining it with the other ingredients and baking it. We’ve never used raw chicken in this recipe before, and we know it’ll take a long time to cook. When I don’t have time to prepare chicken, I always go for a rotisserie chicken! They have a little greater calorie and sodium content, but the convenience of that choice overcomes the disadvantage! In addition, one rotisserie chicken provides enough meat for this dish.
Is it possible to freeze this casserole dish?
Absolutely! Up until the baking stage, we suggest putting everything together as you normally would. Then, instead of baking it, place it in an airtight container and freeze it. When you know you’ll have a busy week ahead of you and won’t have time to do much other than put a dish in the oven, this is a wonderful thing to do.
Is it necessary to use quick rice or may I use normal rice?
Minute rice comes highly recommended. We’ve tried it both ways when it comes to baking. When using normal rice, you’ll need to increase the bake time, and the extra time in the oven will dry up your casserole. Some of the rice was still firm in the center after 60 minutes. Continue to use Minute rice!
